Stir fry the veg , and then mix in with rice , like a risotto but withot the stickyness . You could always flake the salmon and mix it in to ? Try serving with soy sauce or balsamic vinegar .

Salmon is a prestige dish, so its more the presentation of the side vegetables and the sauces that make it. Here are some successful ideas I have had fun with:
Popular sauces would be based on the sweet or tangy such as maple syrup, lemon, or lime. A Hollandaise is good. Personally , I like maple syrup with slivered Almonds.
A stir fry with all the veggies you already have would be good. Cut the carrots and parsnip in long skinny pieces ( "Frenched")
Traditionally, seafood restaurants will serve the salmon on a cedar plank along steamed broccoli and lemon peppered "home fries" (leave the peel on) If the seafood section of your grocery store doesn't sell cedar plank pieces for this purpose, buy rough cedar shakes at the lumber store. Get them to cut them about half the size of your serving plate (and at least 1/4 bigger than your fish pieces). Sink them with a rock in water for as long as you have before you have to start cooking. Then, broil the salmon pieces on the "planks". It doesn't take long- watch closely. If it is on the BBQ you may have to douse the planks from time to time - (use white wine or light beer on salmon) Save the planks for next time.

I place the salmon in a flat bowl, stick loads of basil on it some lemon pepper then cover it and stick it in the oven. As soon as you see the proteien appear you know the salmon is cooked. I serve it with mash potato and mix veggies. Tasty.

we used to butterfly salmon out flat on a cookie sheet
scatter a few bacon strips and onion slices over top before baking in the oven. consult your cook book for cooking time and temperature. serve with ordinary boiled potato and veggies of your choice. oh and i suggest you try some raw onion wedges.

you've enough to do a salad, which is perfect for salmon. or a stir fry. Brussels are in a class of their own so just steam them. And grate the parsnips, deep fry 'em, and sprinkle onto the salad..

roll out a piece off puff pastry a bit bigger than your salmon fillet
shape it into an oval dish & bake in the ovan for 10mins, meanwhile poach salmon in white wine & cream. when both cooked sit salmon on top of pastry & pour on some of the poaching juices serve with new potatos & french beans.

Half-Boil some baby potatoes for about 10 minutes then shallow fry them until golden and crispy. Make up a dressing of Lemon & Honey and then dot that round the plate with some watercress and spinach.
