When I have leftover roast beef , I cube it, chop some onion and garlic sautee the meat onions and garlic add beef stock (the low sodium in the can works great) simmer for a bit and then I use the beef gravy mix ,pour in a bowl or cup add water whisk up to get the lumps out and add, cook until thickened. cook some egg noodles or rice. Takes about 20-30 minutes to make, and tastes really good.

easiest thing i can think of would be beef and noodles.
simply chop your roast beef in to bite size or smaller pieces, place in a pot of boiling water, add noodles (egg noodles, dry or frozen are best) add any vegetables and seasoning/spices that you like and cook per the instructions on the noodle package until the noodles are done. You may want to add some beef broth (or left over gravy) for added flavor.

Another rather simple meal would be to use canned biscuits, flatten 1/2 of the package out in a pie pan, like a pie crust. Mix roast beef w/a can of gravy, vegetables, seasoning/etc. put the crust in the oven for about 1/2 of the cooking time (usually about 5-6 minutes), then take it out of the oven, fill with the beef mix, strech the remaining biscuits out over the top of the mix, return to the oven an cook for another 10-15 minutes or until the top is golden brown.

I've often used leftover roast beef to make soup. The recipe is pretty simple, and indeed, invited experimentation.

Leftover meat (usually beef)- cut into small pieces or chopped
1 envelope instant garlic mashed potatoes
1 onion, chopped
1 can tomatoes
1 can tomato sauce
Oregano, extra garlic, pepper, sage, thyme, and basil to taste. Mix and match the spices.
Vegetable of choice. I prefer garden-mixed vegetables (frozen).
Just enough water to finish filling the crock pot up to about an inch and a half under the rim

Simmer on low during the day. By dinner time, it will be ready.

You can use the left over roast beef in the following ways 1. Hot roast beef sandwiches: Heat beef gravy, add thinly sliced beef and heat throughly. Place 2 slices of bread on plate, place heated meat slices on them and add some gravy. 2. Roast beef hash: Dice left over beef into bitesize cubes, dice left over boiled or baked potatoes and dice some onion. In skillet heat a small amount of oil and saute onions, add beef and potato and a small amount of gravy. Saute over moderate heat until a crust forms on the bottom and then flip over to cook the other side. Serve with ketsup 3. Shepards Pie: Dice beef and cooked potatoes, add vegetables such as corn, peas, or beans. Add salt and pepper to taste and enough gravy to moisten. Place in casserole dish and top with mashed potatoes. Bake at 350 for 30 minutes or until potatoes are golden brown. 4. Cold roast beef sandwiches. Make with good rye bread, thinly sliced onion, and mayo or blue cheese dressing

Open faced Roast beef sandwiches..with hot gravy poured over with some veggies........OR.......do a stir fry (with the sliced roast beef) some veggies and make some rice*
OR.....do up some mashed potatoes, veggies and have left over roast beef slices.

I always make meat pie.

Chop up your leftover meat and scatter in the bottom of a frozen prepared pie crust. Add some canned new potatoes and carrots on top of that, a little salt and pepper, and then some jarred brown gravy, or make your own. Top it with another pie crust, and bake in a 375 oven for 35-45 minutes. My mama always used the leftover pot roasts for this. And they freeze beautifully. If you freeze it first for later though, the cook time is about 90 minutes. enjoy.

Stew your roast beef with water and beef bullion in a frying pan(to enhance the "beefy" flavour.
Toast a few pieces of bread, spread thinly with ceasar salad dressing, top with you roast beef, some banana peppers, shredded mozza cheese, and salt and pepper. Broil in the oven a few miutes until the cheese looks awesome!
