I'm tired of meatloaf and patties - please help!

this was my grandmas alternative for meat lump or loaf.. ha ha

get your ingredients together like you are making a meatloaf.. hamburger, onion, eggs, green peppers, garlic salt, and some tomato sauce. instead of the regular binder use uncooked minute rice.. make lil 3 inch size meatballs and then cover with tomato sauce.. and 1 cup of water and sprinkle with extra green peppers and onions.. put in 13x9x2 and cover with foil.. cook for hour or so.. and they will be so moist and the tomato sauce will sweeten with the peppers.. its strange.. but my grandma calls them porcupines.. and they are still one of my family's favorite.. serve with mashed potatoes and go to town.. i know it seems like meatloaf but its a whole different world with the tomato sauce.. :D good luck and have fun..

Hey, Michelle M! My mum makes those too, and calls them exactly the same thing! Must be a generational thing. [grin]

As for your hamburger issue, Sharon, here's something I got off the back of a Campbell's soup tin. It's good if you like Tex-Mex.

1 pound ground beef
1 can cheddar cheese soup
1 cup beef broth
1 cup water
1 cup salsa
2 cups small pasta (macaroni, shells, fusilli)

Brown the ground beef in a frying pan (medium-high heat). Add the broth (or make your own by using packets of instant boullion!) and the water. Bring to a boil. Add the pasta. Mix well, cover, and cook for about ten to fifteen minutes, stirring occasionally. When the pasta is done to your liking, turn off the heat, add the cheese soup and the salsa, and stir very well. Let sit until heated through.

And speaking of recipes passed on from family, my mum used to serve this casserole All The Time when I was growing up:

Alphabet Casserole

1 pound ground beef
1 can mushroom soup
1 cup milk
1 can peas
1 big bag of plain potato chips

Preheat oven to 350 F. Crush the chips into fine pieces. Brown the ground beef in a pan. Mix the mushroom soup in a bowl or four-cup measure with the milk. Open and drain the can of peas. Now you're ready to start!

In a Pyrex bowl or casserole dish (square or round), put a small layer of chips. Then add half the beef. Then half the peas. Then half the mushroom soup mix. Repeat -- chips, meat, peas, soup. (See, they're alphabetical!) Top with chips. Bake for 50 minutes to 1 hour (until heated through). Let stand five minutes before serving.

Both these recipes are actually better the next day, which is a good thing, 'cos they make plenty of leftovers. :P

Winter Vegetable Beef Soup
2 TBL butter (olive oil can be used)
3 Onion, finely chopped
1-1/2 lbs lean ground beef
3 cloves garlic, crushed
3 - 4 cups beef broth
2 (1 -lb,12oz.)cans tomatoes
1 cup peeled and diced potatoes (if organic, don't bother to peel)
1 cup peeled and diced carrots (same as potatoes)
1 cup chopped celery
1 cup green beans (I use frozen, cut green beans)
1-1/2 cup dry red wine
1 Tbl dried basil
1 tsp dried thyme
2 tsp salt
1 tsp pepper
In an 8-qt kettle, melt the butter and cook the onions over moderate heat until they're tender and golden - about 5 - 7 minutes. Stir in the ground beef, separating the meat with a fork, add garlic and cook, over moderate heat, until the meat has browned. Add the remaining ingredients. Bring the soup to a boil over high heat, reduce the heat, and simmer the soup covered for 1-1/2 hours. Adjust the seasonings 5 mins. before serving. I always serve this soup with a grating of jack cheese, and a side of fresh, crusty, garlic bread. Bon Apetit!
Note:
This hearty soup freezes nicely. It's better if it's made a day or two before it's served. It also stretches easily to feed extra guests. Add carrots, potatoes or other vegetables to soup kettle, cover with additional stock, and simmer until the vegetables are tender.

Add cooked scrambled burger to any of the following:

- Pasta with a little spaghetti sauce, maybe with a few bits of cooked onion and/or some stewed tomatoes
- A white sauce made from a roux (butter, flour, milk) and any or all of the following: salt, pepper, worcestershire sauce, onion powder; serve over toast
- cooked rice, diced veggies, some stock or bouillon plus water to make a thick sort of soup
- some stock or bouillon plus water, add a little oil/fat if the meat is too lean, making a juicy sort of beef sauce, add a little onion powder or chopped onion along with some salt and pepper and serve over a bread or soft roll

Use raw burger and some breadcrumbs along with seasonings of choice to make meatballs. You can add beaten egg, chopped onions, peppers, whatever. Cook up a bunch in a frying pan with a small amount of light olive oil and freeze whatever you're not ready to eat right away.

Try a burger made with lean meat, add an over-easy fried egg and some cheese to the top.

Try a burger with hot sauce.

Cuban Picadillo:
1 & 1/2 lbs. of ground beef
2 to 3 cloves garlic chopped
large pinch of dried oregano
2 bay leaves
One 8 oz. can tomato sauce
1/2 cup of stuffed green olives
1/2 cup raisins
1/2 cup of toasted slivered almonds

In a 12" saute pan brown beef breaking it up to a fine texture as it browns. Add garlic as beef is browning. Do not drain beef unless amount of fat is excessive. Add oregano, bay leaf and tomato sauce stirring well to blend. If necessary add some water to make a fairly liquid dish. Add stuffed olives and raisins and simmer until liquid has evaporated and raisins have "plumped". The dish should be moist but not running any liquid. Salt & Pepper to taste. Garnish with almonds. Serve over white rice. I find the contrast of the sweetness of the raisins and the saltiness of the olives to be really interesting. Add the crunchy nuts and you have something really different and delicious. I served this to some Cuban friends of mine and they loved it, reminded them of the Picadillo they used to eat in Cuba.

Do you like stroganoff? I like meatloaf and there all different recipes on www.allrecipes.com. If you eat pork there's usually a ground pork and veal mix next to the hamburger area and it will give it a different taste.

I also like it crumbled in mac n cheese with stewed tomatoes.

try chilli olive oil corriander marinate them for a day and when cooking splash on a bit of worstichire sauce(havent spelled that right sorry)but its made by lea and perrins serve with salad and chunky chips

Taco salad, curried meatballs, Swedish meatballs, spaghetti and meatballs, chili, so many different casseroles. I go to the food network to find most of my recipes. Try it.
