We threw out all of our Teflon pots given the concerns around that product. However, it isn't clear to me how Calphalon's non-stick pots and pans are produced...they do not appear to be "Teflon," but they give little information regarding what, precisely, it is. The website says, "The interior surface features a proprietary matrix of four interlocking nonstick layers, each of which contributes to the cookware's long-lasting performance." Does anyone know what these are, and whether they are more or less safe than Teflon?

Calphalon uses a different technology than the DuPont Teflon. It's more durable and longer lasting. It's more of a baked in process rather than a sprayed on layer. Calph uses a mix of dozens of different metals to create this, but you still need to treat the pan right. Never cook on high heat. Never use a metal utensil. Never use cooking spray. Never put in the dishwasher. If you treat the pan right, it will be the best pan you will ever have.

As far as safety goes, even Teflon is safe, no matter what people say about it. It DOES burn off at high temperatures and can cause flu-like symptoms, but ONLY if you put an empty pan on high heat and walk away. The chemical does end up in our blood systems, but it has never been linked with certainty to any serious health problems.

Feel great about your purchase. Calphalon makes fantastic, heavy duty pans that conduct heat like a dream and last for eons.

Okay, Teflon is entirely safe. There is a poisonous chemical used in producing it, but in the chemical reaction it is rendered harmless.

It's like saying table salt (sodium chloride) is poisonous. Sodium is a dangerous element that explodes when exposed to water. Chlorine is a toxic gas that kills you if you inhale it. But combined, they produce a delicious seasoning. Same goes for Teflon. Potentially harmful chemicals are combined to create something completely safe and very useful.
