It is called neuro-conditioning. Your brain develops a literal groove in your brain that "remembers" how to do a certain task. This is why it is so hard to quit smoking, biting nails, etc. Once we have developed a "habit" it is impossible for our brain to forget, it needs to be replaced with something else.
