Mayonnaise Cake
"Mayonnaise makes this cake nice and moist."
Original recipe yield: 2 -8 or 9 inch layers.
INGREDIENTS:
1 cup mayonnaise
1 cup white sugar
3/4 cup water
2 cups all-purpose flour
1 1/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
Sift all-purpose flour, salt, baking soda, and cocoa together.
Whip mayonnaise, white sugar, cold water, and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Pour batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Frost with your favorite frosting.

German Apple Cake

1 cup vegetable oil
2 cups white sugar
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
4 cups apples - peeled, cored and diced
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch cake pan.
In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 45 minutes or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners' sugar or with a Cream Cheese Frosting.

Too late for today, but here's one for next time: Easy Cobbler (serve with ice cream) 2 cans pie filling (any flavor) 1 stick butter, melted 1 box yellow cake mix Spray the bottom of a small cake pan. Pour pie filling in and top with dry cake mix. Melt butter and drizzle over cake mix. Bake at 350 degrees for about an hour or till golden on top. Serve warm or cold with ice cream.

Fresh Oranges with Caramel
Serves 4
If you need a light dessert after a filling meal, try serving this colorful dish in which the freshness of the oranges complements the sweetness of the caramel perfectly.
8 large oranges
3oz (75g) granulated sugar
4 small sprigs fresh mint for garnish
Cut away the rind, pith and skin from the oranges. Holding each peeled orange over a bowl to catch any juice, divide into segments by sliding a knife down one side of a segment and cutting it from the skin, then cutting down the other side and pulling out the section. Repeat with the remaining segments and then divide the segments and juice into individual serving bowls.
Put the sugar in a heavy-based pan with 2fl oz (50ml) of cold water and bring to the boil over a medium-high heat, stirring occasionally. Boil the syrup for a few minutes, watching very closely to prevent it from burning (as it will turn a dark colour and taste bitter if you over cook it). Cook until it turns a rich golden-brown, then remove the pan from the heat immediately and trickle over the bowls of oranges. Garnish with mint and serve quickly, before the caramel starts to dissolve.
Melon in Syrup with Toasted Almonds
In small saucepan, bring 1/3 cup water, 3 tbsp. sugar, and 1 tsp. grated lime zest to a boil. Boil 3 minutes. Cool. Add 11/2 cups honeydew cubes and 11/2 cups cantaloupe cubes. Serve sprinkled with 1/2 cup toasted sliced almonds. Serves 4.

Here's my favorite easy cake recipe:
CHOCOLATE GOO CAKE
(1) German chocolate cake mix
(1) 14oz. can sweetened condensed milk (not evaporated)
(1) jar caramel or butterscotch ice cream sauce
(1) 8oz. Cool Whip
Heath bits or toffee bits to taste
Bake the cake mix in a 9x13 pan according to package directions. While still warm, poke it full of holes with a wooden spoon handle and pour over the sweetened cond. milk and the ice cream sauce. Cover loosely and refrigerate for several hours or overnight. Just before serving, cover the cake with Cool Whip and top with Heath or toffee bits. Keep leftovers refrigerated.

Dump Cake
1 20oz can diced pinapple
1 20oz can cherry pie filling
1 box yellow cake mix
1 stick butter
4 oz chopped pecans
DUMP pineapple in bottom of 9 x 13 casserole. DUMP cherry on top of pineapple. DUMP cake mix on top and spread evenly. Cut butter into tiny pieces and distribute evenly ontop of cake mix. DUMP pecans all over the top. Bake at 375 for 47minutes. YUMMY
