My favourite is tofu scramble.
Check out the Moosewood Cookbook or this recipe: USE EXTRA FIRM TOFU

Ingredients
2 Tbs (30mL) oil

1 box tofu, drained

1/8 tsp (0.5g) turmeric (more or less according to taste)

1/2 tsp (2g) garlic powder

1 Tbs (15mL) low-sodium soy sauce

1 cup (200g) fresh mushrooms chopped (optional)

1 green onion, finely chopped (optional)

1 tomato, chopped (optional)

1 bell pepper, finely chopped (optional)

Directions
Heat oil in a skillet. Add veggies and cook until they are tender but crisp. Add tofu, breaking it up into chunks. It may get quite crumbly; this is okay. Add soy sauce, garlic powder, and turmeric. Stir around for a few minutes, until the seasonings are well distributed. Cook over medium heat until the tofu is hot. A few drops of Tabasco or other hot sauce adds a spicy touch. Serve with toast and fruit for a hearty breakfast.

Makes 4 servings.

If you're willing to eat soy cheese and meats, then you could try this variation on that popular fast-food breakfast sandwich:

1 english muffin
1 slice soy cheddar cheese
2 soy sausages OR 2 slices soy ham

Toast the muffin, heat the meat. If you're using the sausages, slice them down the middle and lay them flat on one side of the muffin; if using the ham, just place it on the muffin. Add the cheese.

I make this fairly often, not because I'm vegan, but because I'm addicted to the things, and it's a healthy alternative to a McHeartAttack!

you didn't state how strict you are but since you are having trouble figuring out breakfasts i assume you are no egg or dairy Vegs. and that does make it hard to have much variety.
one of my favorites is muesli ,it can be as versatile as your imagination or taste runs .the base is rolled grain. oats work best and unless you want to soak it overnight use a quick (not instant) cooking.rolled wheat has a good flavor but needs lots of soaking.I put 1 cup per person in a bowl and then add fruit it can be any thing (.i like grapes cut in half with apples, raisins and sun flower seeds. but strawberries or blueberries are awesome too, peaches there is no limit on how you can change the flavors).sweetner of your choice (i like brown sugar but rice syrup or honey is good.) add liquid 1 1/2 cups to every1 cup of dry ingrediants(I use soymilk but rice milk is good)soak untill consistancy is to your taste or overnight. left overs will keep well if coverd and refrigerated at least one day.this is good for snacks also.

MORNING SOUP
i make my reg veggie soup but put barley in ,i put enough barley that when its done its quite thick almost like a watery hot cereal,at this point you can portion and refrigerate.after you reheat add 1 tsp (or to taste) red miso paste.

check out www.vegweb.com
good luck
