Now don't get me wrong - I like peanut butter - but she puts way too much on her toast and it makes me feel sick. What should I do ?

Why don't have a one to one talk with her. Sometimes all we need to do is to communicate more with the person we love and at times it is not that hard.
Just let her know how you felt. I am pretty sure she will appreciate your honesty.
