People have told me that I will burn more calories throughout the day if I replace my office chair with a Fitball or Swissball, because my body will have to work on balance...Is that true?

They are Great to sit on for a Couple of Hours every other day! BUT not all day every day!
Try a Kneeling chair!
It supports the Lumbar region and is Great for your Posture too!
