Hello,
You can change the background, font size, type of the header and footer but unfortunately MS Office doesn't permit changing color of the header and footer in Excel.
This feature has been suggested to Microsoft but not yet available in Excel.

Yes you can.... it is a little long-winded but this is how you do it.
First choose 'View' from the toolbar and then 'Header and Footer'.
Once you have typed in your text, or highlighted existing text, click on the 'Options' button on the RHS.
Then choose 'Page Options' button at the bottom of the box and then choose 'Format Setting'. You will now clearly see the option to change the colour of the text to whatever you want.

I don't think so, I just tried it myself.
I suppose it wouldn't really need to be changed, as Excel is used for spreadsheets, which are a formal document, so black should be the colour of the font.

Yes. When you type the header click the "F" button it's the font button you can change the color there.
