i have seen my fiances sister do it but i cant remember how to do it thank x

INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Banana and Walnut Loaf
Ingredients
4 medium bananas (approximately 12 oz/350 g)
6 oz (175 g) walnut pieces
pinch of salt
1 rounded teaspoon baking powder
1 level teaspoon ground cinnamon
4 oz (110 g) plain flour
4 oz (110 g) wholewheat flour
grated zest 1 orange
grated zest 1 lemon
4 oz (110 g) butter at room temperature
6 oz (175 g) soft dark brown sugar
2 large eggs at room temperature

For the topping:
1 level tablespoon demerara sugar
Pre-heat the oven to gas mark 4, 350°F (180°C).

You will also need a 2 lb (900 g) loaf tin, lightly buttered.

Begin, as soon as the oven has pre-heated, by spreading the nuts out on a baking sheet and toasting them lightly in the oven for 7-8 minutes – use a timer so that you don't forget them. After that, remove them from the oven to a chopping board, let them cool briefly, then chop them fairly roughly. Now, in a bowl, peel and mash 3 of the bananas to a purée with a fork, and peel and chop the other one into ½ inch (1 cm) chunks.

Next you need to take a large mixing bowl and sift the salt, baking powder, cinnamon and both the flours into it, holding the sieve up high to give it a good airing, then adding the bran that's left in the sieve. Now simply add all the remaining ingredients (except the chopped banana and nuts) and, using an electric hand whisk, begin to beat the mixture, first on a slow speed for about half a minute, then increasing the speed to mix everything thoroughly and smoothly. Then lightly fold in the chopped banana and walnuts. You may need to add a drop of milk to give a mixture that drops easily off a spoon when you give it a sharp tap on the side of the bowl.

Next pile the mixture into the tin, level the top with the back of a spoon and sprinkle on the demerara sugar. Bake in the centre of the oven for 1¼-1½ hours, until the cake feels springy in the centre. After that, remove it from the oven and let it cool for about 5 minutes before turning it out on to a wire tray. Then let it get completely cold before serving or transferring it to a cake tin.

I have this lovely recipe, which has been adapted from a Gary Rhodes recipe:

8 oz self-raising flour
6 oz caster sugar
2 eggs
3 mashed over-ripe bananas
2-3 tablespoons of golden syrup

(Gary's recipe involves butter, but it's not necessary - you lose some of the banana flavour, and it makes it a very rich cake!)

Mash the bananas in a bowl, so that they form a thick liquid. Add the remaining ingredients, and stir together. Pour into a lined 2lb loaf tin, and cook on a low heat (150 degrees) for about an hour and a half, or until the mixture no longer sticks to a skewer. Simple, and very tasty!

There are lots of recipes - but the one I like best is more of a banana cake than a bread. Basically you can just follow a standard sponge recipe i.e. 6 oz each of butter flour and sugar but instead of 3 eggs - just use 2 eggs and mash 3 bananas. Its Yum!

Hi there, this is the recipe I use all the time.
225g (8oz) SR Flour
1/4 teasp bicarb of soda
pinch of salt
75g (3oz) butter
175g (6oz) caster sugar
2 eggs
450g (1ib) bananas weighed with skin on, then peeled and mashed
100g (4oz) chopped walnuts

Heat your oven to 180c, 350f, gas 4.
Grease and line a 1kg (2lb) loaf tin
Mix together flour, bicarb and salt.
Cream the butter and sugar add the eggs a little at a time, alternating with the flour.
Stir in remaining flour, bananas and walnuts.
Place in the prepared tin and bake for 1hr 15mins.
Cool on a wire rack.

I sometimes use half walnuts and half sultanas for a change.

This is sooooo yummy...the maple syrup gives it that little something extra!

Banana Oat Bread

1 1/4 cups flour
3/4 cup quick cooking oatmeal
1/2 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg
1 cup mashed peeled banana
1/2 cup maple syrup
3 tablespoons oil
2 tablespoons maple syrup
2 tablespoons sugar
1/8 teaspoon ground cinnamon


Preheat oven to 350°F. Grease a 9x5x2 loaf pan.

In a large bowl, combine flour, quick cooking oatmeal (uncooked), brown sugar, baking powder, baking soda, cinnamon, and salt. Set aside.

In a small bowl, combine eggs, mashed banana, maple syrup, and oil. Gradually add egg mixture to flour mixture only until moistened.

Pour mixture into prepared loaf pan. Bake in oven for 45 to 50 minutes, or until a toothpick comes out clean when inserted in the center. Remove from oven. Cool for 10 minutes before removing from pan.

Brush top with 2 tablespoons maple syrup then sprinkle with sugar and cinnamon.

1 cup vegetable oil
3 cups coarsely mashed very ripe bananas (6 large)
1/4 cup crème fraîche
2 teaspoons vanilla
1 1/3 cups walnuts (4 oz), toasted and chopped
Special equipment: a standing electric mixer




Preheat oven to 350°F. Butter 2 (9- by 5- by 3-inch) metal loaf pans, then dust with flour, knocking out excess.
Sift together 3 1/4 cups flour, baking soda, cinnamon, and salt into a bowl.

Beat together eggs and sugar in bowl of electric mixer at medium-high speed until very thick and pale and mixture forms a ribbon when beater is lifted, about 10 minutes. Reduce speed to low and add oil in a slow stream, mixing, then mix in bananas, crème fraîche, and vanilla. Remove bowl from mixer and fold in flour mixture and walnuts gently but thoroughly.

Divide batter between loaf pans, spreading evenly, and bake in middle of oven until golden brown and a wooden pick or skewer comes out clean, 1 to 1 1/4 hours.

Cool loaves in pans on a rack 10 minutes, then turn out onto rack. Turn loaves right side up and cool completely.

Only read the bit about spotty bananas in Valentines answer (thumbs down for being to long) but good tip - I used to work on a banana plantation, very heavy work, and I 'love' banana loaf

Take a normal sponge cake recipe at the end add a couple of mashed bananas and some walnuts too make it taste even better.
