Please can someone give me the proper recipre for skirlie, woth all the right amounts of what you have to put in. I have read a few recipes but they dont tell you the exact measure ments of the ingerdients you have to put in. I did as on yahoo answers before and i got one answer but it didnt work right.
So if anyone knows where i can get a good recipe i wojuld be greatful thanks

225g (8oz) Medium Oatmeal, lightly toasted
110g (4oz) Dripping or 4 tbsp of Oil
150ml (¼ pint) Chicken or Vegetable Stock
2 onions, finely chopped
Salt and Pepper to taste

Heat the dripping or oil in a large frying pan.
Add the onion and cook until soft and golden brown.
Add the oatmeal and mix in well.
Cook for about 5 minutes, stirring frequently.
Add the stock and allowing it to be absorbed by the oatmeal.
Season well and serve with light creamy mashed potatoes.
Use as a stuffing poultry or game bird, or serve accompaniment to meat or game.

INGREDIENTS:
3-3-1/2 lb. chicken
4 oz medium or coarse oatmeal
1 medium onion, chopped
2 oz. shredded suet
2 oz. dripping salt and pepper
mixed herbs (optional)













1 Set oven to 350 F. or Mark 4. Remove the giblets for the gravy. Rinse and wipe the chicken well. Put the oatmeal, onion and the suet or dripping into a bowl. Add salt, pepper and herbs to taste. Mix well with a fork. Stuff the chicken. Take care not to overfill the cavity as the oatmeal swells when cooked. Place the chicken in a roasting tin and roast for about 20 minutes to the pound and possibly 20 minutes over depending on the bird. Serve with roast potatoes and fresh vegetables.
2 A verstile dish, Skirlie was often eaten instead of meat, especially when times were hard. Here it makes a delicious stuffing.
