A is ambiguous; it could mean that something in particular is hard to do unless you have coffee, or that "doing without" coffee (making the sacrifice of not drinking coffee) is hard to do.

B can only mean the second but it's a bad splice; "Doing without coffee is very hard" is more correct.

C is grammatically correct but means something quite different: Preparing and offering coffee to (probably a lot of) people is very hard to do. For C to mean the same as the others, you'd have to say "dispense WITH coffee" but even then it sounds very odd.

Although they are all grammatically wrong ...IT IS HARD DOING WITHOUT COFFEE is the worst of the three. It leaves the question unanswered. It is hard doing what exactlly without coffee?
