You will absolutely be impressed by China! In Shanghai and Beijing, you will feel like back in the international metropolis! Shanghai is more like New York, but has less graffiti, and homeless people. Beijing, as the capital and the hosting city for 2008 Olympics, is cleaner and more traditional in architecture and culture as well as history! Although Xi'an is not as modern as Shanghai, but it's the most historical city in China with over 2000 years of history! With the world famous Terra Cotta Warrior there, Xi'an's position is absolutely irreplaceable!
Talking about the food, you will enjoy the best Chinese food ever no matter where you live! Since you will get the most authentic Chinese food, not local customized Chinese food and the competition is much more intense.
Regarding the safety, just remember to pack your common sense! Follow your normal safety practices that you would in any big city. For example, don’t walk unescorted on darkened streets at 3:00a.m., don’t leave your bags unattended, be aware of beggars, don’t flash your cash! If you need to count out cash in public to pay for a purchase do it discreetly.etc.

Mm... the food is actually pretty good, but you have to know where to go. In Beijing, there are street vendors all over the place. You have to be careful of those. Go to the ones that are really big and have lots of people, if you want to. The little snacks are really good. You definitely have to try the um.. sugar coated fruit.. thingys. Haha sorry I don't know what it's called in English, but I'm sure you'll be able to find it. And in restaurants, I really don't think you'll find that "Chinese" food they sell in restaurants in America. Oh, if you're not vegetarian, when you go to Beijing, you definitely have to try the Beijing roasted duck. It's really good. Hm... I don't know which district in Beijing you're going to, so I can't direct you to any good resaurants, but look for the multi-storied restaurants (2-ish floors). Those usually are the cleanest and have the best food. Haha..
And as for the cleanliness... there are its clean areas and its rundown areas, just like the US. Generally, the tourist areas and richer areas are pretty well-kept, while the poorer residential areas are a little more on the.. dirty side. I wouldn't recommend using public bathrooms in those areas, either, if you happen to go to a place like that.
But overall, it's a pretty nice place. The tourist sites are amazing, and the country's culture is very interesting. It should be a very educational and fun trip.
And it's really not that dangerous to walk alone on the streets. Just make sure you keep your money and ID and important stuff close to you, and stay in the presence of other people. Don't wander off into isolated areas... general safety precautions with any place you might visit.

You will enjoy your time in China if you've never been there. It's an exciting place to see.
I lived an worked near Shanghai for a year and felt very safe. As you will see, China is a country of much irony...think of it as Ying and Yang. You can walk from ritzy shopping malls in downtown Shanghai where you can see Ferraris, then walk a few minutes down the road and enter in a neighborhood where people on the streets are plucking the feathers off of chickens and see young children peeing on the sidewalk.
Yes, technically it's a communist country, but you'll see capitalism in it's purest form when people try to sell you pirated "watch-bag-DVD's".
The food can be quite good too, depending of course where you go. Don't expect to find the type of Chinese food you have grown to love in North America. In China it's the authentic Chinese food...and no, you don't get fortune cookies (they don't have them there!)

Per capita crime rates in China are extreemely low as compared with the USA. Xian and Beijing can be dusty cities, but its wintertime now and the weather has been fair. Shanghai is a megatropolis jungle, two days in Shanghai will be enough, same for Xian.. Spend most of your time in Beijing exploring.. It is my favorite city.. Suggestions of places to visit in Beijing include, Mutianyu Great Wall - Ask your tour company which wall they are taking you to, Badaling is the most touristy, Mutianyu is one of the longest most beautiful and least restored parts of the wall.. You'll have to swat away a few vendors on the climb to the base..
Baihei park is a must see and comfortable place to relax and marinade near the lake with a beer..
Wanfujing road has an excellent book store and night food market..

First you have to ask. What’s dirty? The food is phenomenal. The best food you’ll ever taste. Shanghai is just like any other city in China and has one of the best restaurants and service in the world such as Shanghai cuisine, Cantonese cuisine, Beijing cuisine, Szechwan cuisine and Hunan cuisine. The food is just fabulous. As for a hotel, get something between 200RMB and 300RMB per night double bed. Crime is very rare in China and Shanghai is one of the safest cities in the world. If you have couple of days to spare, I suggest travel to Hainan Island. You won’t be sorry. It’s called the Hawaii of China. Hope that helps.

its not necessarily dangerous & dirty. it is in some parts. but the parts you are going to should not be they are not small cities and have great populations so it should be a rather fun expierience for you.
