This is really quite easy! It is like making a pizza and a ravioli. You can either make your own pizza dough or buy it pre-made. Cut the dough into 4 equal pieces and knead each portion into a round. Cover and let rest 15 minutes.
Preheat the oven to 450 degrees F. Place a clean pizza stone in oven to preheat.
Dust a clean work surface lightly with flour. With your fingers and palms, flatten one of the dough rounds into a 10-inch oval about 1/4-inch thick.
Spoon the filling mixture just above the center of one oval of dough. Fold the dough to form a half-moon and then press the edges to seal. Fold the edge up with your fingertips and pinch closed to form a ridge all the way around. Repeat with the remaining dough and filling. Place calzones on pizza stone and bake for 15 to 18 minutes, until golden brown.

Dough:
1) Dissolve 1 pk yeast in 1 cup warm water.
2) Mix 1 TBSP sugar, 2 TBSP oil, 1 tsp salt, 2 3/4 c flour to yeast and water.
3) Mix together till smooth. Knead and cover for 30 minutes. I cover with clear wrap
tightly.

In separate bowl: (this is what I use for a meaty and cheesy calzones. The ingredients are
up to you).
1) Mix 1 small can mushrooms, drained
2) 1/4 green pepper
3) 2 slices of onion
4) 1 jar Ragu (any kind)
5) 1 tsp italian seasoning
6) 1 tsp oregano
7) 1 tsp basil
8) 1/2 tsp garlic salt
9) 4 links of cooked italian sausage
10) pepperoni

Roll out dough approx. 10" circle. Place 1 to 2 cups of sauce mix in center of dough. Add
1/2 cup mozzeralla cheese to sauce in the calzones. Fold over and crimp shut.

Place on greased cookie sheet. Brush with melted butter (after 15 minutes of cooking).
Cook for a total of 25 min @ 375 degrees or until golden brown. Cover with remaining
sauce and cheese and enjoy !!!
HINT: this makes an awsome pizza crust as well.

CALZONE

6 cans tomato sauce
1 cup half and half
your choice of Italian seasonings
black pepper and sea salt
1 tbs garlic powder or four cloves
(or prepare your normal spaghetti sauce)
2 lbs ground beef and/or turkey
mozzarella cheese or other
2 cans store bought biscuits, any kind

Heat oven to the biscuit directions. In a big pot add first 5 ingredients to taste; turn to low-med. In a skillet brown meat with a little salt and pepper and Italian seasonings. Cook to your liking; preferably medium to well done. When meat is done drain grease and rinse. Add the meat to your sauce and turn off burner. Now open the cans of biscuits and roll out to good sized square preferably on a cooking sheet that you will cook them on; add about a tablespoon of meat sauce. Add a small slice of cheese to the middle. Then bring all four sides to the middle; pinching them together. If you’d like at this point, you can add a slice of cheese to the top, for optimal support. Bake as the directions on the biscuits tell you. Viola! Serve with a salad.
You can also leave out the meat and use mushrooms instead. Sprinkle the top of biscuits with garlic and Italian herbs to make it pretty.

Corned Beef Cabbage Calzones
Prep 20min / cook 35 min (12 Calzones)

2 tsp vegetable oil
1 large onion, finely chopped
3 cups shredded green cabbage (1/2 of small head)
1 carrot, peeled and chopped
2 tsp Dijon mustard
1/4 tsp salt
1/8 tsp black pepper
1 cup shredded part-skin Jarlsberg cheese (4 ounces)
1/4 cup chopped deli corned beef (about 2 ounces)
Half of 32-ounce package frozen pizza dough, thawed

1. Preheat oven to 400 deg F.
2 In large nonstick skillet over medium heat, heat vegetable oil. Add onion. Saute until slightly softened, about 3 minutes. Stir in cabbage, carrot, mustard, salt, and pepper. Cover and reduce heat to low. Cook until cabbage is wilted, 10 to 15 minutes, adding water if necessary to prevent sticking. Uncover and cook 1 minutes, stirring. Let cool slightly. Stir in cheese and corned beef.
3. Shape dough into 12-inch-long log on lightly floured board, adding flour as needed to prevent sticking. Divide into 12 equal pieces. Roll or pat out 1 piece of dough into 6-inch circle. Spoon 1/4 cup filling over lower half of round. Fold dough over to enclose filling. Press edges firmly to seal. Crimp edges with fork. Transfer to ungreased baking sheet. Repeat with remaining filling and dough.
4. Bake until heated through and golden brown, about 20 minutes. Cool on wire rack 15 minutes. (If you want to make calzones ahead, wrap the unbaked pies in plastic and keep in the refrigerator for up to 3 days before baking.)

I do it the easy way, with frozen yeast bread dough, presliced pepperoni, preshredded cheese, and sauce that I've either made a large batch of and frozen individually or store bought sauce....you can throw these things together quickly if you take the bread dough out before work and come home and roll it out, stuff it with ingredients, roll it back up and bake it....very easy!
