Basic Lomein

Ingredients
4 each mushrooms, dried, black
1 cup pork
1/2 cup celery
1 cup chinese cabbage
1/2 cup bamboo shoots
1/2 cup bean sprouts
6 each snow peas
2 slices gingerroot, fresh
1 clove garlic
2 tablespoons oil
1 tablespoon sherry
1/2 cup chicken stock
Directions:
Soak dried mushrooms.
Slice roast pork, celery, cabbage and bamboo shoots.
blanch bean sprouts. Stem snow peas. Shred ginger root and crush garlic.
Heat oil. Add ginger root and garlic; stir fry to brown lightly.
Add pork and stir fry a few times. Then add in sherry to blend.
Add all vegetables except snow peas and stir fry 1 minute more.
Add stock and heat quickly. Then cook, covered, 3 minutes over medium heat.
Stir in snow peas. Combine mixture with tossed noodles
(*See below)
Variations: Substitute cooked beef,ham, chicken, duck, crabmeat, lobster or shrimp.
You can also add shredded green onion to the garlic/ginger mixture.
You can use Shaoxing wine instead of sherry, which is more authentic.
*To cook noodles, prepare boiling water with a little salt.
Add noodles and cook until barely done.
Drain and rinse with cold water to stop cooking.
Separate noodles with a fork, then toss them with a little sesame oil or peanut oil and set aside until they are ready to go into your stir-fry for the final heat.
You will want about a pound of noodles for the above recipe.

VEGETABLE LO MEIN
3/4 pound fresh noodles
6 Chinese mushrooms, soaked in water
3 large celery stalks, cut in 3" lengths
2 bamboo shoots, chopped
1 cup bean sprouts
2 tablespoons oil
1/2 teaspoon salt
1 cup vegetable or chicken broth
1/2 teaspoon sugar
Boil noodles in salted water until just done, about 4 minutes. Drain well and rinse in cold water briefly.
Stir in a small amount of oil to prevent sticking. Stir fry the mushrooms, celery, bamboo shoots and bean sprouts in oil. Add salt and broth, oyster sauce and sugar.
Push vegetables up side of the wok and add noodles, stir to warm, then mix in vegetables.
Add a teaspoon of cornstarch mixed with a teaspoon of water if a thicker sauce is desired.

CHICKEN LO MEIN
1 lb. boneless chicken breast cut in strips
1 tbsp. oil
1 (16 oz.) pkg. frozen oriental vegetables
1 c. water
2 tbsp. soy sauce
1 chicken bouillon cube
4 oz. spaghetti or linguini, cooked
Heat oil in 10 inch skillet over high to medium high heat. Add chicken and stir fry until lightly browned about 3 minutes. Stir in vegetables, water, soy sauce and bouillon.
Reduce heat, cover and simmer 5 minutes or until vegetables are tender. Stir in spaghetti until well mixed and heated. Serves 4.

All the same ingredients you would use for a chop suey, but add noodles.
Example,
bean sprouts,
waterchestnuts
onion
garlic
chinese cabbage
green and/or red pepper
bamboo shoots
baby corn
(and any other veggies you prefer)
chop and stir fry all together with a hint of sesame oil
in a separate bowl mix
some water with a bit of cornstarch
to add to the veggies when they're kinda limp
you can even add any number of sauces to liven up the flavor
example
hoi sin
black bean
garlic paste
red pepper paste
I've even added a thai sauce for an extra special zing
finally add your cooked noodles
the thinner the noodle the better
if you can't find a good thin chinese noodle
try spaghetini (extra thin spaghetti noodle)

Baked Gon Lo Mein
Gon Lo Mein means dry-fried noodle. This is a Hawaiian version of a Chinese dish. Other vegetables such as won bok or cabbage may be used in this dish as well if desired.
1 lb chow mein noodles (ready to eat)
2 cups bean sprouts (8 oz)
3 green onions, cut into 1-inch lengths
1 small onion, sliced
3 stalks celery, sliced diagonally (1 cup)
1 tablespoon sesame seeds or sesame oil
1/2 lb char siu pork, sliced
sauce
2 tablespoons shoyu
3 tablespoons oyster sauce
1 tablespoon sugar
1 teaspoon salt
Lightly grease a 9x13-inch baking pan.
Mix noodles, vegetables, sesame, and char siu, and place in pan.
Mix sauce ingredients, and lace noodle mixture with sauce.
Seal with foil.
Bake at 325°F for 45 minutes.
Remove from oven and loosen foil to let steam escape (so vegetables don't overcook).
Serve hot or cold.

You can swap-out the shrimp for beef or chicken if you desire
Shrimp Lo Mein
Ingredients
4 tbl.Peanut oil
1-1/2lbShrimp
2Celery,shredded
1Up cabbage
1Green onion minced
2tsp.Cornstarch
1/2lbSpaghetti or chinese noodles
1 tbl.Soy sauce
1/2tsp.Salt
Preparation
cook spaghetti as directed,drain,rinse in cold water,add a few drops oil and mix to keep from sticking.set a side.
mix shrimp ginger, scallion, cornstarch, sugar, soy sauce set a side to marinate.
heat wok to smoking add 2 tbls. oil stir fry meat mixture,do not over cook.
add 2 tbls.oil,heat, stir fry carrots and cabbage 2 mins.add spaghetti, stir well and cook a few minutes,add meat mixture,1 tbs soy sauce and salt, stir a minute to heat and serve

In the superstore, fruits are usually chosen far too soon. Some are rocks, many are bad. Some of the fruit and vegetables are generally right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
