u need good plum tomatoes and good buffalo mozzarella and some fresh basil
Slice the tomato medium thickeness do the same with the mozzarella and place on a large plate then tear the basil and scatter on top of the tom and mozzarella then drizzle with good quitly olive oil and a pinch of salt and fresh ground black pepper.
I serve this with warm chunks of cibbatta bread
The thing with this dish is to use the best ingredients u can afford because it is a basic dish andall the flavours will stand out. The mozzarella i think has to be full fat because i have tried many low fat ones and i find them very bland a bitter.

• 5 or 6 ripe tomatoes, chopped in large chunks
• 2 tablespoons fresh chopped basil
• 1 small sweet red onion, sliced paper thin
• 4 ounces low fat fresh mozzarella, cut into cubes (the soft kind)*
• 1 cup purchased fat free balsamic vinaigrette dressing

Gently toss tomatoes, basil and red onion together.

Place 1/4 mixture on each salad plate and top with 1/4 of cheese cubes. Pour about 2 ounce of dressing over each. Serve with wedges of focaccia bread.

As a side dish, this salad will serve 8.

Not sure if there is a name for this, cause that's all there is to it.
Get the small grape tomatoes,
throw in some mozzeralla balls,
and mix with a nice italian dressing
(I prefer anything with a balsamic base for the dressing).
For something different, add in some artichoke hearts.
Yummy!

Insalata Caprese...

Slice up your ripe tomatoes (not too thick, not too thin) and spread them out on individual plates or a big platter. Then tear off pieces of mozzarella (ideally buffalo mozzarella, but good cow’s milk mozzarella will do) and scatter them over the tomatoes. Follow this with basil leaves and a generous drizzle of your best extra virgin olive oil. A pinch of sea salt and grind of black pepper aren’t out of place either—but forgo the vinegar. If your only two ingredients are really good tomatoes and really good mozzarella, you don’t want to swamp them.

caprese salad?

Sounds like vomit. Eat loads of the above then drink 4 litres of beer within five minutes. Voila, no recipe required. (A bucket would be handy for collection)
