Here is a quick list of some Chicago restaurants:
Charlie Trotter's - known as one of the best restaurants in the world. Call early, plan on spending $400 on dinner for two.
Alinea, Tru, Arun's are in the same category as Trotters.
Classic Romantic Spots: Ambria, Geja's, The Pump Room, The Italian Village, Il Mulino, Cite, NoMi (great views in these last two).
Fun Restaurants:
Gibson's: Steaks in a loud, fun atmosphere.
Rumba: Latin, with Salsa dancing later in the evening.
Nacional 27: Same as above, but a little tamer.
Opera: Exotic Asian with cool setting.
Marche: Stylish atmosphere on Restaurant Row; you can go to the Tasting Room for dessert and and after dinner drink with great views.
Anywhere in Greektown (Santorini, Pegasus, etc.) for some flaming cheese - Opa!!
Tizi Melloul - Middle Eastern - you sit on pillows on the floor.
Sushi Samba Rio - very trendy right now, see and be seen place.
Just good restaurants:
Frontera Grill - fantastic Mexican.
Mia Francesca, Rose Angeli's: Small Italian places in the neighborhoods instead of downtown.
MK, Coco Pazzo, so many more.
Check some out on www.metromix.com and pick what you like. It is hard to go wrong.

Many great restaurants in Chicago that's why we are Chicago. It all depends on your style and your age. Some of the suggetions that were given are great ideas but it really depends on the atmosphere you prefer. I think Halikahiki(sorry spelling) was awesome for a date when I was in my early twenties but now for an anniversary I would say it wouldnt have the same vibe for me. If you want to get away from the downtown restaurants (which btw can't go wrong with any the ones mentioned by the guy before me with the big metromix list) a lot of the suburb downtown areas are starting to really pick up like Downtown Naperville. Total couple spot if you want to stay in the Burbs.
Congrats and have fun!

There are tons of good restaurants in Chicago. Check out the internet or a Chicago magazine; but two that come to mind for you are both on the lake: The Signature Room on the 95th floor of the Hancock with great views of the lake from on high and Riva which is on Navy Pier with an"ocean view" of the lake. Navy Pier is chock full of interesting fun things to do as well.
Happy Anniversary!

I know one really romantic place but you can go there only after dinner(light dinner ) they serve only drinks.
The name is Hala Kahiki Tiki Bar & Lounge.(2834 North River Road ,River Grove, IL 60171)
This place is amazing. Everything you ever heard about a tiki bar is represented here, including a vast and bizarre garden of Hawaiian delights, filled with cut-out turkeys and Easter Island heads. Each room is darkly lit and strewn with tiki wood and beads. There is also a gift shop filled with authentic flower leis and assorted knick knacks such as, hand-carved tusks and buddha statuettes. The drinks are moderately priced and taste a lot like candy. It's opened from 4pm-2am.
Happy Anniversary!

I just had dinner at New Years Eve at Fogo De Chao. It isn't ultra romantic (kind of loud), but it is a great experience.
What about the Signature Room on the 95th floor of the Hancock? Amazing views.
