I'm having a hard time ranking them since there are so many great fights, so I sort of put my opinion by category. Hope that's okay.

Bloodiest: Forrest Griffin versus Stephen Bonnar 1 (TUF 1 Finale. It was also a surprise since I had watched the show, but it was the first TUF so I wasn't sure how good the fight would be. let alone know those guys had so much heart.)

Funniest: Tito Ortiz vs. Randy Couture (UFC 44. Tito is known for trash talking, but did anyone expect quite, polite Randy to spank Tito?)

Biggest bodyslam: Quinton Rampage Jackson vs Ricardo Arona (Critical Countdown 2004. Ricardo was winning and all of the sudden Rampage gives him a huge bodyslam which knocked Ricardo out.)

Biggest eyeopener (cut above the eye): Vitor Belfort vs Marvin Eastman (UFC 43. It was the biggest gash I have seen. I guess Vitor gave Marvin something to remember his debut.)

Most Classic: Royce Gracie vs everyone (UFC 1. Who knew the little guy would beat all the bigger strikers? The family has a great rep, but the stiker vs grappler question was there.)

I would say Tito V Couture when Randy ended up spanking Tito's *** in the last 10 seconds. 5 rounds.

These jump to mind. I dont watch much Pride.

#1-UFC 6- when ken shamrock beat dan severn for the first superfight title.
#2-UFC 48-When Frank Mir beat Tim Sylvia for the heavyweight championship.(Mir was a big underdog).
#3-Pride 21-Don Frye v.s Yoshihiro Takayama(You have to see it to beleive it kind of fight)Frye won by referee stoppage.
#4-Pride 19-(Frye v.s Shamrock) That fight should have been a draw, I dont even like draws but shamrock stood his own and threw down with frye.
#5-UFC 1-(Gracie v.s open)Gracie beat every fighter includeing ken shamrock for the worlds first ufc world championship title.

There are so many more I could list but these are the ones that stand out to me right now.
