Food that is crappy!!!! He is addicted to Kraft White Cheddar Macaroni and Cheese and frozen pizzas. I am mainly a vegetarian and although I do eat meat on occasion, I eat very healthy. I cannot get him to eat anything "good for you". Occasionally he will eat a green bean but it has to be cooked in butter with ham hocks and bacon grease for 9 hours. I only do this for holidays. He always says, make anything you want honey, I will try it. This doesn't happen. I am always making 2 meals as it is just the two of us and I don't mind cooking at all, I just want to make him eat better. He likes other foods in addition to these things, but his choices are limited. Any suggestions as to what to do? Now, there are about 20 meals I make that all of you have in your arsenal of recipes, meatloaf, polish hambergers, spaghetti, lasagna, ect.... but I want him to come over to the healthy side!!! I don't mind making those things but want him to try "different" things...

Everyone in the south cooks thier greenbeans for 9 hours, dude they rock, they are just a heart attack waiting to happen!!!! LOL, really the beans are a staple in Georgia!!!!

ALL of your answers are so GOOD...at least the positive omes are, I have tried EVERTHING ya'll have suggested....he is a hopeless dope but I love him so much and I just want him FOREVER. what i did with my husband was, i added fresh veggies and herbs to his meals without telling him.
most of the recipes you mention are easy to do that with
add more garlic, onions, carrots, tomatoes,celery, spinach, peas, etc
to everything you cook
and when you make him a salad... add meat to it
he will eat it

I like that idea of having him help you plan the weekly menus. It's not fair to you to have to make 2 meals all the time, even if you don't mind. Maybe you could set at least 2 nights a week (3 would be better) for healthy eating with him helping choose the meals, and let him have what he wants on the other nights. You are right, you are both adults, and it's time for him to step up to the plate. Reassure him that it's because you love him and maybe on those nights you could make him a delicious...but healthy...dessert treat. Good luck! :)

I stopped eating ground beef for health reasons, and thus, have successfully fooled meat-eating people into eating ground soy! I use Yves Ground Round, and the texture is surprisingly faithful to 'real' ground beef. If you're looking for a substitute that you can slip into some recipes, this might work for you.
If you can find it in your area, I also recommend soy cheese. The best I've found so far is Soy Original. It's not all that good straight from the fridge, but melting it on things is a *dream*. You don't get that scary greasy film that you get with milk-fat cheese. :P
Of the four recipes you listed above, you could successfully use 'ground round' in spaghetti and lasagne. If you want a Tex-Mex version of lasagne, replace the tomato & meat sauce with ground round, a can of cheddar cheese soup, and a cup of salsa. The best recipes I've found for slipping vegetables into my family's diet are chili (with soy meat) and stir fry (with real chicken).
If he'll eat taco salad, you could use this recipe: 1 head lettuce, 1 very large tomato, 30 grams cheese, 1 package ground soy, 1 cup salsa, 1/2 cup fat-free sour cream. Shred the lettuce, slice the tomato, grate the cheese. Heat the soy and salsa together in a pot or in the microwave. Layer in two bowls: half the lettuce, half the meat/salsa, half the cheese, half the tomato, and half the sour cream. This is surprisingly filling, and is only about five Weight Watchers points per serving. And hopefully he won't notice that it's healthy! (This works with chicken, too.)
Feel free to contact me if you're interested in other ways to 'fake' food for people who aren't interested in eating healthily. I have a lot of this type of recipe, because I had to fool myself so much in the beginning!
It's so hard to go from eating crap to eating healthily -- you probably know this, and I am the first to admit it! [laugh] I started eating more healthily in August of 2006, and it was really difficult at first. I really hope you find some success with this. It's tough knowing that your spouse is headed towards a heart attack, and not being able to do anything about it!

Hi T; I know that it's hard to find things that your husband would like>>Have you tried making a cheese sauce out of white cheddar and milk to pour over the macaroni,also have you tried b.b.q. ribs with a dry rub and you can also try mashed cauliflower instead of mashed potatoes..You might want to try to make a crust for pizza and let him put what he wants on it try to lean towards low fat cheese.You may want to try a leaner pork chop and stuff it with rice and vegetables and bake it in the oven..Ask your man if he would at least try these things for you and ask him to maybe help you with some recipes that you both can compromise on..Have you tried the food network channel and looked up Paula Dean she maybe able to help you..I don't mean to sound like a repeat about the food network channel but sometimes you can find good recipes..Also try to located the nutrition dept at your local hospital maybe they can help you..Good luck

Too bad about all of the hateful answers here. Obviously, you care about your husband's health, and want to help him change his eating habits. You can't completely change him, but you might try getting him to commit to eating one healthy meal per week (to start). Let the food be his choice, but it has to be healthy! You can try making salads with all kinds of little goodies in it like nuts and dried fruits, and grilled chicken strips, with some fat free raspberry vinaigrette dressing. I don't know anyone who would turn their nose up at this! Keep at it. Don't scold him for eating foods that are unhealthy, but give him positive strokes for eating foods that are healthy. Be encouraging, and you may get him on the road to healthy eating! Good luck!

He's grown up eating that way and so used to it. Maybe focus on a vegetable, don't season with all that grease, but season with better options. Serve this with something he does eat and just ask him to try it. Sounds like trying to get a young'in to try new things, lol. I've stopped using bacon grease in my cooking, but when my husband cooks, yeah buddy, in it goes! Salt too, is a problem. I've had to tell him to not salt, he can do his own at the table, but I do not want it. There seams to be some things we can't change.

Sit down with him in front of some cookbooks or recipe websites (low fat/heathly choice options only) and together pick out some new meals that you might both enjoy. You might want to try to also have him pick out some heathly ingredients and try his hand at cooking the meal sometime.

I sooooo understand what your going through. Mine wont eat anything mixed, no chicken, nothing frozen, no pork, nothing from a box, no cabbage, casseroles and one dish meals are out, and no pasta. When i ask him what he wants he says anything i make will be fine (YEAH RIGHT!!!!) I dont know what to tell you except make what he does like and leave it at that. You could try switching some ingredients to healthier ones. Use wheat pasta and low fat sauces, theres all kinds of ways to fix a healthy meal without him knowing. good luck!
