once your body uses up all available stores of glycogen it will turn to using ketones for energy. plus the body can convert proteins and lipids into glycogen.
some people can function better on low carbs than others but for a performance athlete carbohydrates are essential.
unless you only eat animal proteins and leafy vegetables is almost impossible to not intake carbohydrates in the diet.

you will lose all your muscle in your body and be skinny and fat at the same time, since your body composition loses carbohydrate. Carbs store glycogen (muscle tissue) for energy and are vital to keeping lean mass. It is the protein that repairs this tissue. So if you don't eat carbs you will be unhealhy. Aim to eat good carbohydrate like whole grain bread, rice and pasta and legumes and sparce on fruit since if eaten too much it can make you gain a little bit more. Eat mostly carbs in your diet. A portion of meat should be a deck of cards and carbs should be 2 decks. Good fats should also be eaten throughout the day too. So really no matter what 50% of cals should be carb 35% cals protein and 15% good fats - nuts, seeds, avocado, olive oil, stuff like that.

Carbs give you energy so your body can normally function properly, so without carbs things start happening like:
1. Irritable
2. Tired all the time, which you sleep more.
3. You can possibly begin to shake, but not everyone goes through this.
4. Mentally you just really don't care what others say.
5. You can't concentrate on one thing.
6. Your cold all the time.
You show signs almost the equivalent of anemia. So go with at least a minimum amount of carbs in your diet, don't just get rid of them period.

Nutritionally, as long as you are getting your vitamin and mineral content from your diet and your pH is at a decent level, carbohydrates are not essential, however it's not normally needed to cut them out or lower their dosage unless drastic weight loss is required.
Research the difference between "good carbs" and "bad carbs" and say goodbye to the bad ones; namely sugar, white bread, white rice, white pasta.
oh and also, get advice from a trained professional...a lot of people that try low carb diets by themselves (and use artifical sweetners as a sugar substitiute) screw it up and feel miserable and fatigued. But it doesn't have to be like that.

You will die but you did not say why you would do that, so I have to guess why. Good carbs like celery and carrots will never make you fat. Bad carbs like cake will, but you don't need to know the whole science of glycemic load. You need to re-learn how to eat so you can become thin and healthy. Find out about fastest way to lose weight, most effective exercise, good and bad carbs, water retention and secret trick used by models to flatten their tummy before an event.

When you don't eat carbs, you body skips the step of converting carbs to sugar and just goes straight to burning fat. You need carbs though. Just make sure you eat the good carbs and stay away from the bad.
And also, what the person above me said. You will be very mean and cranky!

Same thing that happens to your car when it runs out of gas. Carbs are fuel- don't fuel your body.. well, you get the point.
Better make sure you have the insurance because the ambulance ride, doctors, IV's, 20 dollar tylenols, etc are going to add up quickly at that point.
