most cats of my acquaintance just eat the jelly and leave the "meat" bits.

That's a really good question!! My old cat (who died at age 17) in her last years only ate the "gel" part of the canned cat food-no matter what brand or how blended it was. Maybe because all the nutrients can't be put into the gel? In this day with all the technology they should be able to make a gel cat food for the old toothless kitties to lap up that would have everything in it!! Ok--I leave it in your hands to come up with this!! And I will be first in line to purchase it for my next old kitty!!

The canned foods I use don't have bits of meat and gravy. Wellness, Natural Balance, Nature's Organic, Nature's Logic, and Lick Your Chops are almost all smushed up meat. It does have some jelly (which I think is the fat) and I mix that in the can before serving.

Wet cat food is made up of some sort of meat, water or broth, and a carbohydrate. AFFCO Association of American Feed Control Officials makes up requirements for pet food companies to ensure that they get the proper nutrients.
When a cat food is jellied what they do is they use the jelly as the water content and the meat and carbohydrate are the "meat bits" of course there is some moisture in the meat bits too. Pet food companies use starch (which is a carbohydrate) to make the jelly thick.
When canned food has flavors the label can tell you how much "chicken or beef" is in it.
So if a can of food says "Chicken" for cats it has 70% chicken
if it says "chicken dinner" "platter" or "entree" it only has 10%
if it says "with chicken" ir only has 3% chicken.
if it says "chicken flavor" it only has enough chicken in it to be recognize as flavor.

The gel part probably doesn't have the protein and fiber and stuff that the rest of it has, so a cat eating only that wouldn't be getting the right diet.

My cat does that too. But he will eat the pate ones (where it is the texture of baby food), but those are hard to find, and I always get the meat ones by mistake.
