I love to make homemade mayonnaise - with egg yolk, lemon, and light olive oil (herbs and spices as desired). How long will this stay fresh in my refrigerator? That is...if I don't eat it all first...it is so good, better than store bought.

Do not keep it any longer than 3 days. If you do you could be subjecting yourself to samonella.

depends on a lot of variables,,, what was the temp when you stored it,what is the temp of your fridge. The mayo is the only thing I would really be worried about. Most people are healthy enough to take a few microbes but some are not (elderly, children,, ect) I would smell it, if it's only a few days old, smells fresh, taste. If in doubt, throw it out! Once that green stuff starts to build on top is just an indicator. Scrape that off and if you still have some left keep using it. Eventually it will all be gone and then will you know to throw the jar out.

usually it has raw egg so id say about 4 days, make a big batch and freeze it, thaw as needed
