do you salt them while cooking, or wait til serve them?

Scrambled Eggs

Cook on a low temperature. Keep an eye on it. If you like your eggs wet, stop cooking when they reach the desired solidity. A low temperature makes the cleanup easier.

Sunnyside Eggs

Use a frying pan with a top to allow the top of the eggs to be steamed. You can also baste the eggs in the butter you use to fry them. If you like the yolks liquid, cook on medium. If you like the yolks solid, cook on low.

Eggs Overeasy

Cook as above for sunnyside. Flip them over when the whites are nearly solid. Take them off almost immediately. For over hard, leave them in the pan a while.

I wouldn't use salt until the eggs are on the table.

You use medium heat. Add come butter or margarine to stop the eggs from sticking. If the oil smokes, your heat is too high. If you use too low heat they won't cook properly and will be rubbery (or runny, even worse). If you use too high heat, they will burn. You add a little salt and pepper to season them while they are cooking. They do not taste as good if you wait until they are cooked to season them. It surprises me some of the answers here. This is why i do not order eggs in a restaurant, people just don't know how to cook, even the most basic things like this.

I do medium to high temp to cook and salt them while cooking. Just a little though. Putting the salt on after cooking is not so healthy.

here's how i do mine.

heat the pan up on high heat til it's very hot. spray in the Pam or put in the butter or margarine.

crack the egg and drop it in. turn the heat down to medium/low.

this way the pan browns and crisps the egg nicely, it keeps it's shape well and the risk of burning the egg is low.

i salt and pepper them while they are cooking, this way the salt and pepper get into the egg goo and don't go anywhere. if you salt and pepper after cooking it just slides off the egg.

I always fry eggs on low or med low temp. Add salt while the eggs are cooking.

For the fluffiest, most delicious scrambled eggs, add salt pepper and here's the secret: add about a teaspoonful of bisquick to the eggs before you blend them. (I use a stick blender to get the bisquick lumps out), or I suppose you could use a blender also. Blend only for about ten seconds, and then cook on medium heat in a lightly oiled or buttered pan, stirring constantly until done.

Medium high temp. is best (325-350). If they are for me I salt and pepper them while I'm cooking. If they are for someone else I let them do their own seasoning.

low- mix eggs in a bowl with cheese, salt , pepper, whatever then pour in a fry with a little butter on the bottom. cooking them on high will burn them quicker

You can salt them any time. The higher the heat, the more chance you have of burning them or having them stick to the pan. Medium low works the best, esp. for sunny side up.
