Not all do. An engagement ring can house any stone, supposedly the diamond is chosen because of it's "strength" and purity as well as lasting forever.

actually the ring with one central diamond is originally the wedding ring, the engagement ring is used to be made of 7 diamonds in a raw which symbolize the line"i love you for ever too much" then it became 5 in a line that symbolize"i love you forever" then comes the wedding ring with one diamond that says "you are my one and only"

I think i once heard the stone symbolizes the heart, so when you see a diamond in the centre of a lady´s ring, it means her heart is taken, that she is taken lol.

It all has to do with personal choice. Some have 3 stones, some have 1 stone and some are surrounded by a bevel of stones...just depends on what you like.
