would it be bland? isn't bland a matter of opinion though?

sour is the opposite of bitter not of sweet. it has to do with acidity. acid = sour and base = bitter. acid is opposite of base.

when you mix a strong acid and a strong base, u get a salt. the opposite of salty would then be fresh or distilled. :)

I would say, that sour is the opposite of bitter and sweet is the opposite of salty.
