Roasted a bacon joint today for the first time, and realised that the center may not be fully cook. Is it dangerous to eat it when its not fully cook? I know with uncured meat its probably not advisable. But bacon has been processed hasn't it?

madness: There is a real paranoia about raw meat in the English speaking world - I am a veggie but used to eat meat - raw bacon is NOT dangerous but more importantly not that healthy for your heart.

A standard German dish served at parties is a roll with raw pork mince, onions plus pepper and salt. I used to love it. (before I started considering how the pig would feel about being eaten!!)

It is safe if European rules on health and hygene have been followed during all the processes.

the problem is not that what you cooked is Bacon - the problem is that it wasn't fully cooked - you can also get really ill if you do not heat mashed potatoes correctly.

If you are a healthy adult, you are most probably going to be OK and do not need to worry.

According to what I've read, changes in the way that pork is processed have substantially reduced the risk of getting parasites such as tapeworms or hookworms from undercooked meat.

However, most cookbooks and dieticians still recommend that pork be cooked thorougly before eating. If you don't want to put the joint back into the oven, I'd suggest microwaving it until the center is completely cooked.

If you're still concerned about eating pork, undercooked or otherwise, freeze the meat for two or more weeks. I've also read that it will kill off any parasites or bacteria.
