Extra Virgin Oil is the First Pressing of the Olives and thus the best quality...subsequent pressings give ordinary Olive Oil.

Extra virgin olive oil comes from the olives after the first pressing, the olives are then pressed again and get more and more refined so the oil from the first pressing contains more goodness than that from later ones.

Extra virgin oil is usually the first pressing fo the olives. The oil tends to be clearer and is not so tainted by the skin of the olive which can have an effect on the taste.
In terms of dietry benefit though...there is no difference.
Use plain oil for cooking, but extra virgin for dressings and dips.

As far as i know Extra virgin is obtained by the first and only pressing of the olives while normal olive oil is obtained by two pressings of the olives...

Extra Virgin comes from the first COLD pressing of the olives. No heat or chemicals are used in the extraction process. Subsequent pressings may use heat and/or chemicals and are called 'virgin' or just olive oil.

Extra virgin oil is produced from the first press of the olives it is darker in colour and has a stronger flavour, it is best used in salad dressings etc where as olive oil is paler and not so strongly flavoured therefore it is suitable for cooking if you wish to use it to fry or cook with

Extra Virgin Olive oil is more refined and tastes better as a dressing or for dipping bread. Olive oil is better for cooking with.

olives go through an extraction process, the first pressing produces the extra virgin olive oil, each pressing in turn produces less refined oil.
