Hello: This means how you want your meat cooked as in hamburgers or steaks. Rare is when it isn't even cooked and there is blood coming out of it,sorry but this is the truth,medium rare is when it is cooked a little but not much,medium is cooked a little more but you can still see the pink color inside of the meat,medium well is when it is cooked all the way through and there is no pink meat,well done is when it is cooked so throughly,that it is almost a charcoal color and consistency!

Terms like rare, medium, and well describe how thouroughly the steak is cooked. Here's the breakdown...
Rare - Cool red center - most tender
Med Rare - Warm red center
Medium - Hot red/Warm pink center (depends on steak)
Med Well - Hot pink center
Well - Brown/grey center - most dry
Another way to tell without cutting the steak open is to gently press on the center.
How?
Open your hand and hold it palm up. Touch your thumb to the tip of your pinky finger. If you press on the flesh just below your thumb on your open palm, it should feel tight or hard. If you press on your steak and feel this, it is "well done." Thumb to ring finger is med-well, thumb to middle finger is medium and so forth.
I've cooked thousands of steaks, and using this method have had ALMOST none sent back to be re-cooked. If you understand meat temperatures, you will enjoy your dining experience much more by ordering steaks using these guidelines. Everyone likes something different, and don't be afraid to try them all. My favorite is med-rare. Not cool to the touch, but juicy and tender.

It is the "doneness" of the meat when it is served.
Rare is very red and sometimes cool when served
Medium rare is cooked a bit more than rare
Medium is pink in the middle
Well is cooked all the way through (no red when cut into)

It is how long the steak is cooked. Rare means it is still red inside. Medium rare would be pink inside. Well done would be gray, no pink left.

all it means is how you like your steak cooked
rare - mostly to nearly all pink inside ( pretty bloody)
medium rare - cooked on the outside with a lil bit on pink in the middle.
well done - cooked all the way through
