Yankee Pot Roast
INGREDIENTS:
4 to 5 pounds beef roast
1 tablespoon shortening
salt
1/4 cup water
1 medium onion, sliced
1 cup diced rutabaga or turnip
1 cup diced carrots
1 cup diced potatoes
1/4 cup sliced celery with leaves
2 teaspoons dried parsley flakes
salt and pepper to taste
PREPARATION:
In Dutch oven or heavy kettle, brown meat on all sides in hot shortening. Sprinkle with salt. Add water and sliced onion. Cover and simmer for 3 to 4 hours. Add remaining ingredients; simmer for 30 minutes more, or until vegetables are done.
Remove meat and thicken liquid with flour and water paste To thicken: Stir a few tablespoons of water into a few tablespoons of flour and stir until smooth. Stir hot liquid while adding small amounts of flour paste until thickened as desired. Taste and season Yankee pot roast with salt and pepper to taste. Yankee pot roast recipe serves 6 to 8 people.

I had a hard time with cooking a roast until I found out the secrets. First, start off with a good roast. A sirloin tip works best. Next you MUST slow cook any kind of roast with a bit of steam. This breaks down the membranes so the meat won't be tough.
Don't marinade beforehand because some marinades make meat tough, especially acidic ones.
Preheat oven at 300 degrees.
Place a 3 pound roast in a roasting pan. Dry roast for 15 minutes. Take roast out of oven add any seasonings you desire and coat the bottom of pan with water. Cover loosely with foil. Put back in oven. Bake at 300 degrees for three hours. Keep checking the roast periodically and keep the bottom of the pan moist with water. If it appears to be cooking too fast, turn the heat down.

Flour the roast then brown both sides of the roast in a heavy hot skillet with just a little oil. If you have a heavy [like cast iron] skillett you can add some beef broth or water... till almost 1/2 half covered.. then root vegetables like potatoes or carrots..cover ..and bake at 325 degrees for about 3 hours for a 3 lb. roast.

I doesn't matter what cut of meat you use with this recipe
Workgerson's Roast
4-6 lb roast
pkg. dry Lipton onion soup mix
2T worchestershire sauce
1 can cream of mushroom
1 section of fresh garlic minced
Rinse and pierce meat several times with the tip of a sharp knife - place in crock pot on low setting.
Mix the rest of the ingredients together and pour over roast. Add baby carrots and small red potatoes or cut baking potatoes the last 3 hours. Cook for 10 hours. It makes it's own gravy, which usually never needs to be thickened. Serve gravy over potatoes, egg noodles or rice. Enjoy!

Take a large piece of brisket (first cut), construct a pouch with heavy duty aluminum -- put into it the brisket, 2-3 packets of dried lipton onion soup mix, two sliced carrots, some bay leaves, other 1/2 cup beer or wine, other spices as desired. Put pouch on an ovenproof baking tray. Cook at low heat (275 degrees Fahrenheit) for 4-5 hours or until done. You can then slice and reheat in its own juice -- it's actually better the second day.

Put the roast, some veggies (potatoes and carrots, whatever else) all in a crock pot. Add 2 Tablespoons of water and a McCormicks roast packet, as well as a scoop of beef buillion. Let it cook all day.

I make my roast in my crock pot. I add cut up onions, carrots, and celery. I add 2 beef boullion cubes, pepper, granulated garlic, and granulated onions. If you like potatoes cut a few up and add them to the mix. Put it all in the crock pot adding enough water to cover the majority of it. Cook on high for 6 hours and it is moist and yummy.

put itin a pot, add some water and seasonings, let it cook for 4-5 hours, put in some more seasonings, add some potatoes, carrots, and let it cook some more.
