I've always done it the easy way and bought garlic pre-diced - so I am not sure what clove refers to.

The whole garlic bulb is referred to as the head. Just one piece is a clove. If this is your first time using uncut garlic, make sure to peel the clove before you use it. Also, if there is a green part going through the center of the clove, cut it out and chuck it. The green part is bitter. Better yet, chuck the whole head and get another one. The green means it is sprouting and past its prime.

The clove is just 1 piece. The whole thing together is called a head of garlic.

A clove of garlic is one of the pieces from inside. You can get big cloves and little cloves as well, so really it depends on how much you like the taste of garlic to how much you use in cooking.

A head or bulb of garlic is a cluster of cloves. One head usually contains about 10 cloves of garlic. Sometimes you will see them on a string with many heads of garlic strung in a row. That is one #$#@ of a lot of cloves to peel!
