You'll love this one! It's called "three layer cookies" - a.k.a. "nanaimo bars" (pronounced "nan ime o"). It's intense! You'll need an aluminum foil-type square brownie pan (you know, the disposable kind) and
2 cups graham cracker crumbs
1/2 cup shredded coconut
1/2 cup chopped nuts (optional) - whichever kind you like
1 stick (1/2 cup) and 3 tablespoons REAL butter
1 teaspoon vanilla
1 egg
5 tablespoons powdered cocoa
2 cups powdered sugar
2 tablespoons DRY instant vanilla pudding
3 tablespoons milk
3 squares (3 ounces) unsweetened chocolate
First layer:
In a mixing bowl, mix together graham cracker crumbs, shredded coconut, and nuts (optional). Set aside.
In a saucepan, throw in 1 stick of butter, vanilla, egg, and powdered cocoa and cook over LOW heat until butter is melted (about 3-5 minutes). Remove from heat and pour over the graham cracker mixture and stir together until thoroughly mixed. Then press mixture evenly into bottom of aluminum square brownie pan. Place in fridge while preparing the second layer.
Second Layer:
Mix together powdered sugar, dry instant vanilla pudding, and milk. Spread evenly over the first layer. It should be somewhat thick but if it's TOO thick to spread, you can add a little milk, one teaspoon at a time, until it's spreadable. Place back in fridge while preparing the third layer.
Third layer:
Melt together 3 tablespoons butter and unsweetened chocolate squares. Pour mixture over second layer. To get the mixture to cover the entire pan evenly, tilt the pan in all directions. Place in fridge for at least 2 hours or until the third layer has set (it will be a hard shell). It's preferable to let it set for about 4 hours so that all the layers will become firm.
Cut into squares and serve (1" x 1" for a small serving or 2" x 2" for a larger serving). Hope you like it and even if you don't make it for your boyfriend, at least keep the recipe on hand. It's easy to make and only takes about 30 minutes to prepare but it looks complicated when you cut them into squares and see the layers. People will wonder how you did it. It's great for parties or as a gift.
One other thing. It will keep in the refrigerator for a week or more depending on how well you keep it wrapped in plastic wrap.

I love cheesecake... Me personally, I like cold desserts or room termperature ones more than warm ones. For example, while sometimes a chocolate lava cake can be good, it's never my favorite. I just don't like anything like that that's warm as much as other things. Cheesecake is probably my number one pick, and there are so many varieties. About three days, I made a chocolate raspberry cheesecake. It didn't have any toppings, but it was very good. Sometimes cheesecakes can just be flavored, or they can have toppings to add to the flavor, like strawberry cheesecake with fresh strawberries on top. With so many varieties of cheesecake, I can't tell you all of my favorite or all of the recipes, but cheesecake is always a hit and some good recipe websites are:

You can purchase cheesecakes at the store, like Wal-Mart, and those are very good. I like getting the kind that has about three slices of all four flavors in it (chocolate chip, caramel, strawberry, and classic). Or you can make your own at home, which is fun and includes more of your own tastes and you can bake it with love ;] Remember, cheesecakes are always best if they set in the refrigerator overnight after you bake them.
Also, if you don't like cheesecake or just want to make something else, try brownies. Brownies are always delicious!
Good luck, and have a wonderful day!

I've noticed guys love Brownies. I love baking lots of different things but the brownies are most popular. Whenever I bring my boyfriend and the guys he works with anything else they just aren't excited. Brownie mix at the store works good. I learned that when baking brownies do the minimum time on the box because when you take the brownies out of the oven they are still baking, that way they are moist. Good Luck

BANANAS FOSTER (for two)- In a frying pan, 2 tbsp Butter, 3 tbsp Brown sugar and two bananas sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately.

Creme Brulee', and I've found that I like the instant mix by Dean & Jacobs as well as any home made, store bought, or restaurant I've had. Costs between $2.50 and $4.00 most places and takes only minutes to prepare, then chill for a few hours. You gotta try it!
