I like to make cheesy scalloped potatoes. You first have to make a cheese sauce: Melt 1/2 cube margarine, and add about 1/3 cup flour. Cook this mixture on medium heat until it bubbles. Add about six cups of milk and your favorite cheese. (Velveeta works best, and you can just cut into cubes and throw it in the pan). Add salt, pepper, onion powder & nutmeg (to taste). Stir constantly with a wire whisk to get the lumps out. (You can add more milk if it gets too thick). Bring to a boil. Turn off fire. (It should be about the consistency of pudding). Your cheese sauce is done! Then all you have to do is thinly slice peeled potatoes and also slice some onions. Layer the potatoes, onions and cheese sauce in a greased casserole dish. Bake in the oven at 400 degrees (covered with foil) for about an hour. Remove foil and bake for another 15 minutes to brown the top and edges. Enjoy!

Well, here is my mother's famous recipe. It was always a hit from my childhood. I hope you enjoy it.
Scalloped Potatoes
Ingredients
1 potato per person plus two for the pot -- peeled and sliced and covered with cold water
1 medium onion for every 5 or 6 potatoes -- peeled and sliced
all-purpose flour -- to sprinkle
milk -- to cover
ham scraps or slices -- to add to each layer and on top
Get a pot big enough, with some excess room at the top. Put a layer of potatoes on the bottom, then a layer of onions, with a generous sprinkling of flour. Add salt and pepper to the onion layer, and lay some ham scraps on top.
Continue to alternate layers of potatoes and onions. Use two layers for a small dish, but for a larger dish you might need three. Finish with an onion layer, leaving the ham scraps on top.
Add milk to cover the ingredients.
Bake uncovered in 350 degree oven until potatoes are done. Start testing the potatoes after about an hour.

As a lazy cook who loves scalloped spuds, i buy the small red potatoes and slice them real thin along with some fresh garlic. Olive oil on a pan, put the garlic in for a second, add the thinly sliced potatoes, some shredded cheddar on the top and cook it on low fire until tender. Put a drop of butter to melt when it's done. It cooks in about 15- 20 minutes max. The KEY is to cook on LOW fire! good luck! salt etc is up to you!
