Cheater's Lasagna:

2 bottles/cans of pasta sauce
1 pkg lasagna noodles
1 pound hamburger
1/2 onion, chopped
2 pkgs cream cheese, chilled and sliced thin
4 cups shredded mozzarella cheese
1 clove garlic, chopped

Heat sauce in saucepan. Meanwhile, saute garlic and onion until translucent, add mean and cook until browned. Add meat to sauce, stir occasionally until heated through. In 9" x 13" casserole pan, layer in the following order: sauce, noodles, cream cheese, until pan is full. Top with mozzarella cheese. Bake in 375 degree oven for 35-45 minutes or until cheese is bubbly.

I love this recipe, my mom taught it to me. The cream cheese adds a really unique flavor and texture.

I buy Stouffer's brand meat lasagne, family size or larger. I also buy extra mozarella cheese. I then top the lasagne with an extra thick layer of mozarella.

At Christmas time I cooked 2 Stouffer's party size lasangas and topped each generously with mozarella cheese. I also browned 2 pounds ground beef with one chopped onion, drained the grease and added one regular jar of Ragu. I served the lasagne with the meat sauce on the side and garlic bread which I also buy pre-made and just heat and serve. Then I bought a big bag of broccoli florets and heated these up while the cooked lasagne was setting up and the garlic bread was heating in the oven. This served TEN people and I had leftovers! The men all loved it and thought I had sweated for hours in the kitchen. (smile).

2 Jars of Prego sauce (large)
1 to 2 lbs cooked hamburger
1 T Onion Powder
1 T Itialian seasoning
2 gloves garlic (crushed)
2 bay leaves
1 to 2 large containers of cottage cheese (small curd)
1 to 2 bags mozarella cheese
Box of lasagne noodles
13 x 9 baking pan

cook hamburger add itialian seasoning, garlic, and onion powder.
Drain off oil, stir in sauce and turn heat to low/simmer for 30 minutes stiring every 10 minutes or so.

Heat water to boiling add 3 Tablespoons salt about 1 T of cooking oil (optional). Add noodles, cook until just chewy (follow directions on box.) Remove from heat when done, drain off 3/4th of the water but keep some in the pot.

Layer 13 x 9 Inch pan as follows:

sauce
noodles
sauce
cottage cheese
Mozarella
noodles

Until there is no more sauce...Last layer, cover w mozarella cheese

Bake @ 350 degrees for 30 minutes, let stand 10 minutes after taking out od oven.

Try this one, from Tuscany

Ingredients
For the ragu
4 tbsp olive oil
4 celery sticks, finely chopped
2 carrots, finely chopped
1 medium onion, finely chopped
2 cloves garlic, peeled and crushed
1 sprig rosemary
700g/1lb 9oz beef mince
340g/12oz pork mince
1 bottle red wine (750ml/26½fl oz)
2 x 400g tins tomatoes, roughly chopped
200ml/7fl oz beef stock
salt and freshly ground black pepper
For the bechamel sauce
1 litre/1¾ pints whole milk
2 bay leaves
¼ onion
pinch of nutmeg
50g/2oz butter
50g/2oz plain flour
For the lasagne
14 slices of fresh pasta
3 balls mozzarella, cut into small cubes
small handful grated parmesan
freshly ground black pepper
2 tbsp butter



Method
1. Heat the olive oil in a frying pan and sauté the celery, carrots and onion for approximately 15 minutes. Add the garlic and rosemary.
2. Add the beef and pork mince and cook until the liquid from the meat has been absorbed.
3. Pour in approximately 400ml/14fl oz of red wine and stir well. Cook for approximately 45 minutes.
4. Once the wine has evaporated, add the tomatoes and stock. Leave the mixture uncovered to cook slowly for two hours. Top up with more warm stock if necessary. Season with salt and freshly ground black pepper to taste. Preheat the oven to 180C/350F/Gas 4.
5. To make the bechamel sauce, place the milk in a large non-stick saucepan, add the bay leaves, onion and nutmeg and gently bring to the boil.
6. In a separate saucepan melt the butter and add the flour. Beat well and cook for two minutes. Remove the milk from the heat and add a little to the flour mixture. Combine well, and when all the milk has been absorbed, add a little more. Continue to do this until all the milk has been added, whisking continually.
7. Blanch the pasta in salted boiling water for three minutes. Put the bechamel sauce at the bottom of a lasagne dish in a layer, then place some of the pasta strips over the top. Follow this with some of the mozzarella and parmesan, and sprinkle over freshly ground black pepper. Follow with a layer of ragu. Repeat this step twice until all the ingredients have been used up. Dot knobs of butter over the surface and cook in the oven for 30 minutes. Serve.

Alright. This is my secret Greek/Italian grannies recipe. It is a little different, but just divine!

Meat sauce (this is also a wonderful straight spaghetti sauce)
½ kilo beef mince
Large onion
3 cloves garlic crushed
500 grams stewed tomatoes (or a tin of tomatoes)
Bay leaf
2 teaspoons Oregano
2 teaspoons basil
Hand full chopped parsley
Cracked pepper and sea salt
Some cinnamon (yes! Just a shake)
A teaspoon of caraway seeds.
Splash of wine

Fry meat, onions and garlic on medium heat in some olive oil. Add a little water if it starts to stick. Add everything else, and simmer on low for about an hour.

White sauce:

Fry up about 2 table spoons of butter, with the same amount of plain flower on a medium heat until brown BUT NOT BURNT. Turn down the heat, and slowly add about 2 cups of milk while whisking furiously. When all the milk is added, and it is thick, add pepper, pinch cinnamon, salt and about 500 grams of a mix of parmesan and tasty cheese. Keep mixing until smooth. Take off heat.

Get your lasagna sheets, and layer, ending with cheese sauce, then some parmesan cheese. Bake as directed with pasta, then take out of the oven and LET STAND FOR FOR ABOUT 20 MINUTES.

Oh, it is just wonderful!

I use the rcipe on the back of the box (rozondo's???). It comes out great! I just modify it a little. For the ricotta, I mix it with fresh parsley and 1 egg. I also use a lot more sauce than they say. I don't know how much it tells you to use, but I almost double it. I think it says 1 pound of ground beef and 28 oz of sauce. I use close to 2 lbs ground beef and a big jar of Ragu sace. It's really easy and people seem to love it.

you need: 1 onion chopped 1.Lb mince, tin of chopped tomatoes , 4ozs mushrooms sliced,1/2 pint beef stock,cornflour, 3 ozs grated cheese, pre-cooked lasagna sheets, mixed herbs, 2ozs margarine,4ozs plain flour 1/2 to 3/4 pint milk
brown mince add onion cook for few minutes add mushrooms, tomatoes and mixed herbs add beef stock and seasonings cover and simmer for 15 minutes mix 2 teaspoons cornflour with cold water add to mince to thicken if needed add more water or cornflour consistency should not be too runny or too stiff. Leave to cool.
blend margarine and flour together to make a roue cook on low heat for few seconds until cooked not allowing to stick to pan add milk gradually whisk until smooth and fairly thick add half cheese leave to cool.
grease heat proof square dish 3 or 4 inches deep. layer of mince on bottom then layer of lasagna sheets add rest of mince and another layer of lasagna sheets, then cover with cheese sauce, sprinkle with rest of cheese. cook in pre heated oven gas mark 6 electric 210 degrees middle of oven for 20 minutes move to top of oven for last 5 minutes but check though out as ovens vary.
cut into slices when cool

for a difference i use chicken breast chopped, made with a white sauce and muchrooms, and layer and bake with cheese and parmesan
