I have a huge load of mashed potatoes in my fridge and no gravy, so I was wondering about other ways I can make them taste good with spices, sauces, etc.

Add Garlic, Cheddar cheese, or sour cream with or without chives.

Return to pot, add a little milk, if necessary, the extra ingredient and heat!

Or make FABULOUS MASHED POTATO PANCAKES by adding chopped onion, lots of pepper, sprinkle in some flour to thicken, add a little milk, pat into patties and fry in pan with oil. Being of country roots, bacon grease is the BEST oil for potato pancakes!

I had left over mashed potatoes from Christmas. They were kind of congealed but I mixed them up with more moisture You can add water and some sort of oil or butter and milk, or just some sort of broth depending on how you want them to taste or how low fat you want them.

Just the other night I added some dry mustard into them and served spicy italian sausage and onions over them. It was tasty.

You could also add wasabi and serve ahi tuna over them. I add a little green onion, ginger, and sesame oil to the potatoes.

You could chop up some bacon or pancetta (cooked) and some onions. That would perk up those boring potatoes too.

The sky's the limit. Potatoes are so basic that they make a great backdrop for all sorts of flavors.

1) Saute garlic in butter and whip into potatoes.

2) Add butter and parmesan cheese.

3) Here is a recipe for REALLY GOOD mashed potato casserole:
You can always adjust for what you have laying around.

2 cups mashed potatoes
1/2 cup sour cream
House Seasoning, recipe follows
1 small onion, sliced thin
1 small bell pepper, sliced thin
8 tablespoons (1 stick) butter
1 1/2 cups grated Cheddar
4 medium potatoes, cooked
6 slices bacon, cooked crisp

Preheat oven to 350 degrees F.
Spread mashed potatoes evenly on bottom of casserole dish. Layer sour cream evenly over top. Sprinkle House Seasoning, to taste. Saute onion and bell pepper in butter; evenly layer over top of sour cream. Slice potatoes and layer over onions and bell peppers. Add butter. Sprinkle House seasoning. Finally top with cheese. Bake for 25 to 30 minutes. Remove from oven and crumble bacon over top.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

4) Mashed potates are also good under stroganoff or stew.

5) Stir in the same toppings you enjoy on baked potatoes: butter, sour cream, chives, tomato, bacon, cheese, broccoli, etc.

I like to add bacon crumbles, cheddar cheese and green onions, a little sour cream along with a little garlic. Think of it like this, whatever would taste good on a potato is most likely good in mashed potatos.

mix in some butter and cooked onion and pieces of bacon and form into a "patty" and fry them eat them with scrambled eggs. You could also make a shepherd's pie -- layer ground beef fried with onions then peas or corn then mix your potatoes with butter and put a layer of them over the meat and vegetables. Create a cheese sauce with melted cheese and milk and pour over the top ensuring that it goes down the sides and into the meat and put the whole thing in the oven and bake until hot and the potatoes are browned on top.

Garlic, peppers, almost any savory seasoning and spice will jazz them up. Thats the good thing about mashed potatoes. They are quite versatile. Put some garlic, pepper, paprika, and shredded chedder cheese in with a little cream, heat it up, stir it good.

Any one of the following, or two or three if you like. The possibilites are endless:

* wasabi powder
* horseradish
* roasted garlic
* parmesan cheese
* bacon bits, chives & cheddar
* goat cheese
* corn & red peppers
* zucchini & onion
* mushrooms
* jalapeno
* fresh basil, olive oil, garlic, parmesan & pine nuts = potato pesto
* dry ranch dressing mix
* cumin & corn
* tabasco
* chopped cabbage
* sauerkraut
* french fried onions

* add an egg & some milk, fry in some bacon grease to make pancakes

* fry up some ground beef, mix with a can of green beans, corn, onion, etc, top with mashed potatoes and bake at 350° for 30 minutes for shepard's pie

* mix in ground beef, a can of tomato soup, a can of green beans, cheddar cheese, and bake at 350° until bubbly

* in a sauce pan, saute a onion with some celery & carrot. Stir in 2 cups of chicken broth and a pinch of rosemary. Whisk in 2 cups of mashed potatoes and finish off with a teaspoon with wine vinegar. Mashed potato soup.

* make a meatloaf & top with potatoes. Brush with butter and paprika a bake.

* create a "potazza" potato pizza. Top a baked pizza crust with mashed potatoes, cheddar cheese, chopped bacon, and green onion. Bake until browned

* serve in a tortilla with bacon, cheese and salsa for a breakfast burrito

sour cream and cheese is good. You can also add onion, margerine,milk ,or anything else that you might put in a baked potato.
After mixing, you could separate, put a handful in a sealable baggie, mash down with your hand and stack individual bags in the freezer then take out as needed for yummy fried potato patties.,

Mix in an egg some grated cheese like mozzerella and/or parmesan, then roll them into the shape of a log add bread crumbs if they do not shape well. Refrigerate until firm. Dip log in flour then in eggs then bread crumbs and let set in frig for another 10minutes. Pan fry until golden brown. These are called potato croquets. Have fun!

Cheese, chopped jalapenos, broccoli. You make a sort of Shepard's pie with a thick beef stew in a cassrole dish, spoon the mashed potatoes over the top, spread it out to cover the top and bake it.
