I'm wanting to make some vegetable soup for dinner and have read a million recipes. My question is, is it really as easy as throwing your ingredients (peas, carrots, celery, etc.) into a pan of beef broth and tomato sauce for an hour and letting it simmer? Any suggestions on what to throw in?

It really is easy...Carrots, onions, green beans, celery, potatoes, zucchini, all are excellent in veg. soup. The broth is the secret to easy and quick, it used to take hours and taste like water with water,,,broth...Yummm

Yes it is that easy although I would use chicken broth. Add some wild rice in its good. I typically put carrots, celery, potato, tomato, onion, garlic, peas, carrots, squash and cauliflower in my soup. You can add a chili or 2 if you like spicy food or cubed beef if you want beef stew and wine is always good about 1 cup to 1qt of broth. Dont forget your spices. Thyme, rosemary, salt, pepper & marjoram. YUM!

You need some pepper, salt, and a spice like basil, thyme or oregano; also it doesn't have to simmer for a whole hour, just until the vegetables are soft (so throw the dense ones in first, wait a bit, then throw in the less dense).

The easiest and pretty tasty recipe I have is...

1 large can V-8 Juice,plus 1/2 can of water,favorite veggies,salt & pepper to taste, put in crock pot for about 2 hrs.(med heat) and stir occasionally. With a nice salad,and maybe some bread,its a yummy meal!

here is my recipe for "beef veggy stew" my kids love it and it tastes divine
left over steak or stew beef cooked
corn, green beans, carrots, (I buy a bag of frozen mixed veggies, the kind without the lima beans)
4-5 potatoes peeled and cubed (or buy 2 cans of diced potatoes)
1can tomato juice
mix all ingredients together and let simmer on low for about an hour.

Onion and peppers are always good, but you might want to saute them first. Yes, it is that easy. Great for the slow cooker, throw it all together in the morning, and the smell when you get home is so nice, dinner's all ready with no stress at all.

yes it is the secret is to saute your onions, garlic, and celery add water then boil to reduce by 1/2 add remainder of veges veg soup stock , canned crushed tomatoe I prefer over sauce. salt and pepper to taste

you can put in some pasta, lima beans, stewed tomatoes, diced potatoes, cabbage, green beans or corn.
