Here are several recipes for country sausage:

Ingredients
1 Medium tart apple, peeled and shredded
1/2 cup Cooked brown rice
2 tablespoons Grated onion
2 Garlic cloves, minced
1 1/2 teaspoons Rubbed sage
1 teaspoon Salt
1/2 teaspoon Pepper
1/2 teaspoon Dried thyme
1/8 teaspoon Cayenne pepper
1/8 teaspoon Ground allspice
1 lb ground pork

1/2 lb pork tenderloins, ground
1/2 lb turkey breast, ground
1 teaspoon sage
1 teaspoon sugar
1 teaspoon dry mustard
1 teaspoon onion powder
1 teaspoon pepper
vegetable cooking spray

Mix meat and seasonings together.
Shape into 12 patties.
Spray skillet with non-stick spray.
Brown patties on each side.
Add a few tablespoons water to pan, cover to reserve moisture, and cook till done.

1 lb ground pork
1 teaspoon ground cumin
1/2 teaspoon thyme
1/2 teaspoon sage
1 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon cayenne pepper

Combine all ingredients; mix well; cover and chill overnite.

Shape into 6 patties.

Cook in lightly greased skillet over medium heat about 15 minutes, turning occasionally, until browned on both sides and centers no longer pink.

Salt, black pepper, ground sage and thyme, garlic powder (I will explain), breadcrumbs and a any hot spices like cayenne or chilli flakes.

Per pound the sage and thyme about one level teaspoon, same for the garlic powder it mixes better than chopped or fresh, 1/2 teaspoon of pepper, 1/2 cup of breadcrumbs, 1 tablespoon of salt it will weaken during cooking and if you let it sit ti will help preserve the meat, the hot spices are an option.

Add 1/2 cup of water or wine if you like for some moisture then mix it well, casings are fine, but you can roll it up in Saran Wrap like a sausage, refrigerated it and just cook what you want, most allow you to steam in the wrap and then fry to brown them off, this is an option again you can work with.Or make sausage patties and freeze whay you don't use, put them in a Ziplok bag.

I was a chef in Canada for 20 yrs and made all kinds of fresh and smoked sausages and meats of all kind, try different combinations and flavours, even things like more garlic, red wine, smoked flavouring, I get this popcorn salt that is Hickory/Bacon flavour and add it sometimes, it is used in place of the regular salt, kosher is good to for this type of cooking.

There are about a million recipes for pork sausage. Look some up on the internet. Most all Country sausage has sage and red pepper

I would guess sage for sure. Some of that Italian seasoning that comes in a spice container at the store might be good... a mix of oregano and other spices. And personally, I would put some red pepper flakes cause I like it hot!

go to the store and get a sausage mix..then add whatever flavors you like...I like hot peppers and onions in mine....good luck...
