No skill in martial arts is easiest,it really depends on what suits you initially or what you can adapt to or desire from it for example are you only interested in sport aspects or mainly self defence as there is a different attitude towards training mentally and psychically.
That would be the 1st basic question in my opinion the 2nd question could be your current state of health and possibly the 3rd question may well be your finances as some martial arts training can be very expensive.

No martial arts are easy to learn, if you learn them correctly. I would suggest taking up Karate. I focuses more on hand techniques and is a good way to enter the Martial arts world. If there are programs at your community center do that, actual schools are somewhat expensive

Depends on whether your better with your hands of legs. Your background means that you have used both so I think Thai boxing would be a good step forward as the kicks and punches are pretty straightforward and theres not as much ducking and weaving as in boxing. Thai boxing is more about viciousness and relentlessness. Traditional Ju-Jitsu also does not seem to tricky to learn.

i would say that jujitsu is the easiest to learn... even the japaneese knew it was...hense why the translation of jujitsu is "the gentle art" - it involves minimal movement to gain the maximum effect... in two steps and just four moves i can throw you to the ground (osotogarie) and it involves little effort, plus this is the basis for mny other types of that kind of throw... osotogarie and ogoshie are the basic two types of throws (excluding submission throws) that you learn and all other throws are just variations of these...
it is the easiest form as its all about using little movement, plus, in the club i go to, i am allowd to create my own style...so if its not working for me the standard way then i can use my own variations...which make the style jujitsu much more easier for anyone to learn...as long as they allow for prsonal style...
for example, i do not do my rolling break falls the standard way...its hard to explain where i go wrong...but i pass as i can get up from them everytime and carry one fighting and dont hurt myself, even when i train on the concrete...
im only an orange belt in my style jujitsu but i joined in summer and at 18 years old and female i found this style easy to pick up as i didnt need super flexibility (although im getting it now) or strengh, all i needed was determination to get back up when i got taken to the ground!
my sensei (who is now refered to as professor as hes 6th dan)
also taught a blind pupil, a wheel chair dependant pupil and a pupil with no hands and they all picked it up easily...however they left for their own reasons a different points during my senseis teaching...
for these reasons i believe that jujitsu is the easiest form to learn, no matter what ability you are

Krav Maga - don't count it as a martial art myself but easy to learn fitness comes just as hard as it does every time every, hope this helps

I think how your mind and body relates to what you are learning defines easy in your brain..if you like what you are doing, things may flow easier, and your committment is greater...your personality fits the art. So i think the question is kinda null and void, with respect.
