"Chicken Pepper Stir-Fry" - 3 to 4 servings
1 EACH small green, sweet red and yellow pepper; julienned (thin strips)
1 medium onion; quartered
2 garlic cloves; minced
4 tbsp. olive oil; divided
3/4 lb. boneless, skinless chicken breasts; cubed
3/4 tsp. Cajun seasoning
1/3 cup packed brown sugar
2 tsp. cornstarch
1 tbsp. water
1 tbsp. lemon juice
1 tbsp. honey mustard
1 tsp. soy sauce
1 tsp. Worcestershire sauce
Hot cooked rice (optional)
In large skillet, stir-fry the peppers, onion and garlic in 2 tbsp. of the oil until crisp-tender. Remove and keep warm. In same skillet, stir-fry the chicken and Cajun seasoning in remaining oil until juices run clear.
In small bowl, combine brown sugar, cornstarch, water, lemon juice, mustard, soy sauce and Worcestershire; pour over chicken. Return pepper mixture to skillet; cook and stir 1 minute. Serve with rice, if desired.
"All That Jazz Seasoning" (Cajun flavor) - 1 cup
1/4 cup garlic powder
1/4 cup onion powder
2 tbsp. paprika
1 tbsp. ground red pepper
1 tbsp. black pepper
1 1/2 tsp. celery seeds
1 1/2 tsp. chili powder
1 tsp. salt
1 tsp. lemon pepper
1/2 tsp. ground nutmeg
Combine all ingredients and store in airtight container.
"Oriental Fried Rice" - 4 to 6 servings
3 cups cold cooked rice
1/4 tsp. salt
1/4 cup slivered roast pork
1/2 cup finely chopped celery
1/3 cup sliced green onions (scallions); including tops
1/2 cup drained bean sprouts
1 egg; beaten
2 tbsp. soy sauce
Dash ground black pepper
Heat rice and salt in well-greased skillet. Add meat, vegetables and egg; cook, stirring, for 3 minutes over high heat. Add a little shortening if rice tends to stick. Add soy sauce and pepper; cook and stir 1 minute longer.
"Garlic Chicken" - 4 servings
1 envelope Lipton Recipe Secrets Garlic Mushroom Soup Mix
3 tbsp. olive or vegetable oil
4 boneless, skinless chicken breast halves
In medium bowl, combine soup mix with oil; add chicken and toss to coat. Grill or broil until chicken is no longer pink.
"Campbell's One-Dish Chicken & Rice Bake" - Serves 4
1 (10 3/4 oz.) can Campbell's Cream of Mushroom Soup
1 cup water
3/4 cup uncooked regular white rice
1/4 tsp. paprika
1/4 tsp. pepper
4 boneless, skinless chicken breast halves
In 2-quart shallow baking dish mix soup, water, rice, paprika and pepper; place chicken on rice mixture. Sprinkle with additional paprika and pepper; cover and bake at 375* - 45 minutes or until chicken and rice are done.
"Parmesan Crusted Chicken" - 4 servings
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves
4 tsp. Italian seasoned dry bread crumbs
Combine mayonnaise and cheese; spread on chicken and sprinkle with bread crumbs. Bake at 425* - 20 minutes or until thoroughly cooked.

Split some chicken breasts and stuff with cooked sausage and shredded Italian cheese. Close with toothpicks. Dredge in a combo of 3 parts fine dry bread crumbs, salt, pepper to taste and 1 part Parmesan cheese (fresh graded is best). Saute slowly in a skillet with some oil and chopped onions and chopped garlic. Serve next to a peas, mushroom and rice combo!
