Between 14 and 21 days for a complete change, but you will see definite changes in 7. For example, I stopped eating high fat foods a long time ago. I noticed that after a week, if I ate something fried, I'd get queasy. Now if I eat it, I'm a mess of heartburn and nausea (amongst other things I won't mention here out of politeness).
