Because you lose a lot of sweat when you work out. If you lose a lot of sweat you need to replenish by drinking water or else you will dehyrdrate. Carrying container of water depends on the person. Some people prefer just one bottle because that's all they need. To others they need tons of water to replinish.

Your body uses a lot of water while it's burning fat. If one doesn't drink enough water while working out, one will develop a headache and heartburn before they're done with their workout. Both of these are signs of dehydration. Most of us don't drink enough water even if we don't work out.
