This is the pizza dough that I make once per week:
4 cups bread flour
1 teaspoon kosher salt
2 teaspoons instant yeast
4 tablespoons sugar
1 1/2 cups warm water (105-110 degrees)
2-3 tablespoons olive oil
1. In a measuring cup, mix water, sugar, and yeast. Let sit for five minutes - until yeast gets foamy.
2. In a large bowl (or better yet, the bowl of your stand mixer), add the flour and the salt
3. Add the water/yeast mixture to the flour. Add olive oil.
4. Mix. If you have a stand mixer, knead with the dough hook on the lowest speed for 15 minutes. If you don't have a stand mixer, get ready for a work-out... Knead knead knead the dough for 15-30 mins. The goal is to make a smooth and elastic dough. This will take some time.
5. Separate the dough into 2 halves. Roll each half into a tight ball and place into a lightly-oiled bowl (glass), cover with plastic wrap, and put in a warm place for one hour.
6. Remove from the bowl and use for pizza.

I used to make my own pizza dough, but found a much easier solution, and it tastes the same. Buy frozen bread dough and let one loaf of dough rise according to the directions on the bag. Once risen, punch dough down and put on a greased pizza pan or cookie sheet, add sauce & toppings and bake at 400 for 20 minutes.

"Homemade Pizza Supreme" - 2 pizzas
1 (1/4 oz.) pkg. active dry yeast
2 cups warm water (110-115*)
3 tbsp. vegetable oil
1 1/2 tsp. salt
4 to 6 cups all-purpose flour
SAUCE:
2 (8 oz.) cans tomato sauce
1 1/2 tsp. grated onion
1 tsp. dried oregano
1/4 tsp. salt
1/8 tsp. pepper
TOPPINGS:
4 cups (16 oz.) shredded mozzarella cheese
4 oz. Canadian bacon; diced
1 (3 1/2 oz.) pkg. sliced pepperoni
1 medium sweet red pepper; sliced
1 medium green pepper; sliced
1 (2 1/4 oz.) can sliced olives; drained
1 cup chopped onion
1 cup grated Parmesan cheese
1/2 cup minced fresh basil
In large mixing bowl, dissolve yeast in warm water; add oil, salt and 2 cups of the flour. Beat on medium speed 3 minutes. Stir in enough remaining flour to form a soft dough; turn onto floured surface. Knead until smooth and elastic, about 6 to 8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rest in a warm place for 10 minutes.
Combine sauce ingredients; set aside. Divide dough in half. On floured surface, roll each portion into a 13" circle. Transfer to two greased 12" pizza pans; build up edges slightly. Bake at 375* - 15 minutes or until lightly browned. Spread with sauce; sprinkle with toppings. Bake 15-20 minutes or until cheese is melted.

Pizza Dough: 1 pkg active dry yeast (1 tablespoon loose yeast)
3/4 cup plus 1 tablespoon warm water (105-115 degrees) or warm to the inside of your arm just above wrist
add the yeast to the warm water and stir until dissolved. set aside.
2 cups all-purpose(high gluten if you can find it) flour
1 teaspoon salt
2 tablespoons shortening
mix the shortening into the flour and salt with your hands until small crumb like. Add the yeast water and stir. Flour the counter or table just a little. Put the dough on the flour and sprinkle just a bit of flour on the dough. Knead 5 or six times until dough seems smooth. (knead: push down on the dough with the heal of your hand and push away from you slightly. fold dough over and turn just a little. repeat.) Put vegtable oil (about a tablespoon) in the bowl. put in the dough and turn it over so the dough is coated with the oil. cover with a cloth and let stand for one hour. (I put mine in the microwave to keep drafts off of it.) Punch the dough down and press onto greased baking pan. I use a deep dish pan. if using a cookie sheet, you may need to divide the dough in half. top and cook in 400 degree oven for 20 - 25 minutes. Recipe from the Martha White southern sampler cook book.
