Definitly devien! That is thier bowel. I rinse mine in cold salt water and drain well. If I'm in a hurry, I'll blot them dry with a paper towel.

Peel the shell off. On the outside curve of the shrimp using a paring knife, slice down the back and peel out the vein. The black line on the underside of the shrimp need not be removed. You don't have to devein shrimp, but it makes a nicer presentation when you do so.

Rinse them off first, then take off the shell. Hold the shrimp with your thumb and index finger. use the thumb and index finger of the other hand to rip out the legs (using the fingernail if necessary). Then peel the shell off from around the shrimp. Don't forget the tail, unless you want it on. Next, take a knife and run it vertically along the shrimp's back keeping the knife centered. You don't want to cut out pieces of the back, just make a slit. Pull out the little black string that should be visible. If it breaks, just try again, you don't want to eat it. Now it is ready to cook.

Rip the legs off, take the shell off, leave the tail if you want, otherwise pluck that off too.

You don't have to devein, but that is the poop chute and can be gravelly and sandy anyway. Run a paring knife down the back gently, and rinse them under running water while picking out the vein.

You can butterfly them from there, or leave them as is.

Clean the shrimp under cold water and yes, you should devein them. The vein contains sand and this does not taste good when you eat them.

You make an incision along the top and underside, and remove the vein. Mainly just the top. That helps you take out the vein, and it butterfly's them. I've only done it once, but that's how I was taught. Unless you don't mind eating shrimp crap.

cut along the back of the shrimp to expose the vein and then rinse under water while pulling out the vein.

Better read up on the Internet and devein. That is the shrimp's poop parts that need removed.
