First lay out a bit of plastic wrap. Then crush an amount of black pepper corns to taste.
Sprinkle a little sea salt over the crushed pepper.
Place the steak on the top of the mix and wrap the steak in the plastic wrap, then refrigerate for at least 1 day.
Grill the steak to taste. Serve with baked potato, and Wine sauteed mushrooms.

Chicken Fried Steak. You'll need sirloin steak.
Take a good hefty piece of sirloin, about 1/2 pound, and dredge it in flour seasoned with salt and pepper. Then in a bowl mixed with two eggs, herbs, and a dash of milk. Once out of the bowl, put the steak in a breadcrumb mixture. Heat enough oil as though you were making french fries. Once the oil gets hot, about 350 degrees, put the breaded steak in the hot oil and cook for about four minutes on one side. Flip it over in the oil, and cook it about three minutes on the other side.
I'm from NYC, but his is a famous, delicious southern recipe.

I started to make my steaks in a heavy metal fry pan (no teflon)
Just a drop of olive oil in a fairly hot pan. Place steak in pan, let fry and sprinkle top with Lawrey's Season Salt very little.
When first side is brown, turn and brown second side and sprinkle it also (not too much seasoning.) take off burner and cover. Let stand 3 minutes then serve. This is for a 3/4 " steak,
medium rare.
