Consider a park or outdoor venue where there is land available. Check Cypress too. I noticed a few places there that looked like they might be reasonable when I was planning mine. $1000 seems very difficult if you want to feed people anything other than cake and punch, unless you are possibly able to bring in BBQ or something. Rudys BBQ is great! Even then, you are likely to go over $1000 with 75 guests. I don't know if $1000 is your total budget, or just the reception budget. If total, it may be very difficult. My minister was $275. Flowers were about $350. Cake $250 for 45 servings. My venue was Vargos ($250 +$3 per chair... but then we also bought food.) You might want to check them out to see if they would do wedding only for 75 people... they were great and the location is BEAUTIFUL for pictures. I wish you the best in you wedding planning!

Check with all of the local halls & community centers, also depending on the size of your wedding you may be able to have the reception restaurant. I also had some friends who rented a house for a weekend & had their wedding/reception there. They catered the food themselves and bought the alcohol & hired a few waitresses & a bartender from one of the bars they frequent to work the event. Just depends on what your looking for.
