'Ex dirty stripper' has the right idea about it being high maintenance and it drying out too quickly. It causes a lot of wasted product if we only sell two slices in two days (max lifespan of a cake in a hot kitchen) and have to throw the rest out. I work in a top end restaurant and people are welcome to bring their own cakes for occasions such as birthdays and anniversaries etc but we charge a 'cakeage' fee because when they bring their own dessert, it is lost profits on desserts from our end. Another reason is because cake is viewed as being pretty common. Everybody likes comfort food but we intend to wow and sometimes push the boundaries regarding flavours with what we offer for dessert, you can have cake any old day. I like cake too, but when I go out to a fancy place, I don't expect to see it on the menu, I want a dining experience. On the other hand, if I want cake, I will go to a cafe.

A lot of places will not offer cake for a few reason: it dries quickly and does not last as long as pie and people prefer pie and cheese cake 6 to 1 over cake.

Most chains like Denny's will usually have a type of fudge cake. More exclusive restaurants will have a few selections of cake, but they will be pricey. Pie has always been the dominant dessert and is much easier to prepare since most are frozen and baked "fresh" that morning.

I never offered cakes as a dessert because of the time it took to make them and they'd go stale overnight. Pies were easy to keep for a couple or three days in the fridge. Cake just doesn't keep well.

Go to better restaruants. every time I go to dinner, I have a choice of deserts, including cakes, ice creams, and/or pies.
Avoid the typical restaurants and go to the exotic for a better selection of cakes. or Go to TGI Fridays
and stay out of McDonalds. Jack In the Box offers cheesecake and chocolate chip cookie dough cheesecake.

But i can tell you why some restaurants may not serve cake: Cake can become very sticky very quick. And if that happens, they are not allowed to serve it any more. You can't freeze cake and defrost it. But you can do that with pie. Pie are more cost effective to serve.

Most here (Maryland) offer several cakes among their choices. I often see carrot cake, strawberry shortcake and some form of chocolate cake, a pie, a cheesecake, etc.
Maybe it is a regional thing where you live.

Perhaps its just coincidence. Many restaurants that i go to offer a variety of desserts including cakes, pies, etc.
