Macaroni & Cheese:
1/2 stick butter
1/2 cup flour
3 cups whole milk
2 cups heavy cream
1 tablespoon dry mustard
1 lb. macaroni
2 lbs. extra-sharp Cheddar, grated
Make macaroni:
Melt butter in a 3 to 4 quart saucepan over moderate heat, then add flour and cook, whisking, 1 minute. Gradually add milk, cream, and mustard and simmer, whisking occasionally, 3 minutes.
Cook macaroni in 6 to 7 quart pot until just tender. Drain in colander and transfer to large bowl. Stir in white sauce, cheese, and salt & pepper to taste.

This is a favorite recipe of mine. It's simple and delicious.
Mamma's Mac and Cheese
6-8 Servings
1 pound elbow macaroni
2 tablespoons butter
2 tablespoons flour
2 cups milk
Salt and pepper, to taste
2 cups plus 1/2 cup shredded sharp Cheddar
Cook the macaroni in boiling water for about 10 minutes until tender but still firm. Drain well and set aside.
In a deep skillet, melt the butter over medium heat. Add the flour to make a roux and cook, stirring, to remove any lumps. Pour in the milk and cook until the mixture is thick and smooth. Season with salt and pepper. Stir in 2 cups Cheddar and continue to cook until melted. Add the cooked macaroni and stir. Transfer the mixture to a 2-quart casserole dish. Bake in a preheated 350-degree F oven for 20 minutes. Remove the casserole from oven, top with remaining 1/2-cup cheese. Bake for an additional 5 minutes until hot and bubbly.

dice the cheese and add to 1/2 cup of milk. heat slowly as you stir. When cheese is melted, taste. If it tastes okay, pour over cooked mac. you may need to add salt. If it still tastes too strong, add a little american cheese for a contrasting taste. Blends of cheeses are the best to use for mac & cheese. I use extra sharp chedder, colby (or colby/jack), and american. Making the cheese sauce on the side first let's you play with the flavor.

I got this recipe from here one day when I was looking for side dishes. I made this and it was the BEST mac and cheese I have ever had!
For the Maccaroni and Cheese (they serve this in The Bahamas a lot as one of the most popular side dishes): cook "al dente" 8 ounces of maccaroni pasta noodles. Finely chop one sweet pepper, 1 small white onion and nuke them in the microwave for 1 minute to soften them. Drain the pasta, add the peppers and onion. Shred one 8 oz pack of cheddar cheese and add half of it to the pasta when its still hot. The cheese will melt, yum. Mix one tin of evaporated milk with 4 eggs, season with salt, pepper, cayenne pepper and add to the pasta. Pour into a greased baking pan, cover with the remaining cheddar cheese and cook in a 350F oven for 20-30 minutes. Let it rest and cool off to set, heat it up before serving, it is delicious! I love to add 1 cup of sauteed slices mushrooms to this, it makes it even more delish and fancier.

I make a white sauce.
Melt 2 TB of butter over med heat. Add 2 TB of flour and whisk. Cook for a minute or so to cook the flour. Add 1 cup warm milk or half and half. Whisk until smooth and cook until bubbly and thickened. Add your cheese, salt and pepper and maybe a pinch of dry mustard. Add your noodles.
At this point you can eat or place in a buttered casserole dish and bake for 20 minutes. Add some extra cheese on top if you bake it. Also undercook the noodles if you bake it.

3/4 cup evaporated milk
1/2 cup water
1 cup diced process American cheese (Velveeta)
1 1/2 tablespoons butter
1 cup soft bread crumbs
2 tablespoons minced onion
2 to 3 tablespoons chopped pimiento
2 tablespoons fresh minced parsley
3/4 teaspoon salt
dash pepper
2 eggs, beaten
2 cups cooked macaroni
1 can (10 3/4 ounces) condensed cream of mushroom soup
milk, to thin soup
PREPARATION:
Combine milk, water, cheese, and butter in a large saucepan; bring to a boil. Remove from heat and mix in the bread crumbs, onion, pimiento, parsley, and seasonings. Fold in beaten eggs and cooked macaroni.
Pour into a greased 2-quart baking dish. Bake at 350° for 45 minutes.
In a saucepan, heat soup with 3 to 4 tablespoons milk, or enough to thin slightly. Pour hot soup mixture over casserole. Return to oven and bake for 5 to 10 minutes longer.

cook your mac using a little oil in the water. approx 15 mins. drain well. mix 1 can of pet milk and 1 egg, salt and pepper, grate 1-1/2 of cheese. pour mac into baking dish sprinkle with paprika, mix 1/2 half of cheese into mac. pour egg and mixture in and stir. cover the top with the remaining cheese and bake at 325 for 10 mins. then to broil to brown cheese. then enjoy.

Super Easy. 1 box cooked slightly pasta. 3 cups cheese. whatever varieties. 2 sticks butter. 1 cup italian seasoned bread crumbs. melt butter and cheese til thick sauce, combine with pasta and put in greased glass 13x9 dish. bake covered for 35 minutes on 375, sprinkle crumbs on top bake 10 minutes uncovered.

I love to use pasta shells for my mac and cheese! Boil the pasta shells for 9 mins, drain them, put them back in the dish you boiled them in and add the cheese...let it melt completley...keep it stirred and when you think the cheese is melted completley ...let it cool..and serve!
