I am new to wine and have bought bottles of wine that I do not like, but do not want to throw out. What are some idea's to do with them.. I know cooking is one, but will it taste like it? What I don't like about the wines are the dryness.. (usually just reds) so will my food have that dry taste to it?

Try altering the flavor.

Mulled Wine
One bottle (750 mL) of red wine (suggestions: Cabernet Sauvignon, Zinfandel, Merlot)
One peeled and sliced orange (keep peel to add zest to taste into cooking pot)
¼ cup of brandy
8-10 cloves
2/3 cup honey or sugar
3 cinnamon sticks
1 tsp fresh or 2 tsp ground ginger (allspice can be substituted)
Serves 4-6
Combine all ingredients in either a large pot or a slow cooker. Gently warm the ingredients on low to medium heat (avoid boiling), for 20-25 minutes. Stir occasionally to make sure that the honey or sugar has completely dissolved.

About cooking with red wine.
If it tastes like vinegar in the glass then you can be assured that it will taste like vinegar in your food!
That being said, here is a simple recipe to try.

Daube Of Beef
2 carrots, diced
2 celery stalks, diced
1 onion, diced
4 garlic cloves, chopped
2 cups beef broth
3 pounds beef rump roast, trimmed of fat
3/4 cup red wine
1/2 pound fresh mushrooms, sliced
1 tablespoon flour

In Dutch oven mix carrots, celery, onion, garlic and 1/4 cup of the broth; cover. Cook over low heat until soft (about 5 minutes). Add remaining broth, cover and simmer 15 minutes. While it is simmering, broil beef 4 inches from heat until lightly browned on each side (about 3 minutes per side). Add to Dutch oven with 1/2 cup of the red wine. Carefully pour pan drippings from beef into the Dutch oven. Cover tightly and simmer over very low heat until tender (2 - 2 1/2 hours). Remove beef to warm platter; cover and keep warm in oven. Strain sauce into saucepan; press vegetables to extract all juices. Add fresh mushrooms to sauce; boil until sauce is reduced by one third and lightly coats spoon. Mix remaining red wine and potato starch. Stir into sauce. Cook and stir until thickened. Spoon some of the sauce over the roast. Serve the remaining sauce on the side.

Or you can put the meat in a crockpot with the liquids and cook low overnight (8-10 hours), then add the veggies turn to high for about 40 minutes until veggies are done. Carrots go in 1st they take longer to cook.

Hi master...

about the wine...
1,- you can use it with club soda or sprite as wine spritzer
2.- You can use it to cook, and no, the food will not taste that much like the wine unless is hideous and overpowering. many restaurants use wine on their cooking, and is normally very cheap wine, and the food is great!
3. You can use at decoration at home and as a reminder not to buy that wine again.
4.- You can give it to me. :)
5.- Can I ask you out for a movie?
