I have never had an issue with storing ketchup in the cabinet after opening. I always buy Heinz and the regular bottles do not say to refrigerate. When they came out with the "Door size" bottle, that said refrigerate after opening. Because all of the ingredients were the same as the regular bottle, I called Heinz and they stated that even though you don't actually have to, it is recommended that you store opened ketchup in the refrigerator. I only do it now because my wife has a tendency to put things away somewhere other than where she got it, unless it's a condiment off the door of the fridge.

Ketchup and other condiments once the bottle has been opened should be stored in the fridge.. Ketchup's main ingredient being tomatoes, can spoil easily even if processed. Manufactures says no to make their products seem all perfect, but I would not take a chance. I would not take a chance with a Tomato base product sitting out for a long time. For a short time it is ok..If going to a picnic I would still store the Ketchup in the cooler, and take it out just before eating. I never buy hot-dogs from Vendors where their condiments are sitting out there without some kind of ice or cooler to keep them refrigerated . If I am serving some food, chips or meat, that I would enjoy a warm Ketchup, I put some ketchup in a little bowl and reheat in the micro-wave for a few seconds.

How To Store Ketchup

I don't know why, but I always store my ketchup in the cabinet before I open it, and the fridge after. Just the way my mom did it, I never thought to ask exactly why, other than keeping it fresh.

Closed seal can be stored in the cabinet. Once it is opened it should be kept in the fridge. Since it is a tomato base it could spoil if not stored in a cool place. I had a friend back in the 60's who stored hers in the cabinet after breaking the seal. She and her children ended up in the hospital E.R. with food poisoning. The expiration date on the bottle was fine. The Dr. told her to never store products with tomato opened in the cabinet. She blamed it on the brand name. The Dr. and I blamed it on the storage.

I've always stored my open bottles of ketchup in the fridge because I thought it would go bad. BUT now that I think about it - restaurants don't keep their ketchup in the fridge - they leave it out on the tables. Hmmmmmmmmm

Depends on which climate, you are living on. If your room temperature is dry and cold, it is less likely to get spoilt in a short time. For a longer shelf life, it's always better to store ketchup in the fridge. However, if you prefer not to have it cold, you can always bring it out from the fridge before serving it. It would be easier to pour it out too, when it isn't too cold. =)

I keep mine in the fridge because I have found that if you keep it at room temperature the vinegar will strengthen and your ketchup will taste stronger and more sour, I personally do not like strong ketchup so therefor In the fridge it goes, but hey, if you like stronger ketchup then keep it warm.
