It sonds like you need something light and refreshing as a side dish. Candied carrots aren't exactly a light side dish because of the honey and sugar elements. Try serving a fresh toss salad or chop up some fruits and make fruit salad. A light pasta toss in olive oil, parmesan cheese, and fresh herbs would be a satisfying side as well. My family loves steamed vegetables tossed with some Italian salad dressing as a fresh addition to any meal. You could try serving lettuce rolls ups too, filled with deli meats and cheeses. A fresh vegetable tray with ranch dressing (as a dipping sauce) would be equally as delicious. Even fresh fruit, such as apples, or bananas, with peanut butter is a good addition to dinner.

Black eyed peas or green beans would be good. Throw together a salad and maybe some cornbread---you probably want to use green veggies because of the high starch content of the dumplings.

This dish is meant to be an all in one - no need for a side. Think abount it - dumplings = bread, chicken = meat, veggies = side dish. Don't stress and enjoy :)

I usually just have a salad...everything else in already in the chicken and dumplings.

Maybe some kind of cornbread. Or even some sweet vegetables. Just boil the bag of veggies, and when they get some-what soft add some brown sugar and taste it to see if you need more brown sugar. Let is simmer for about 3 mins and serve. Very good...

Spinach salad with fresh raspberries, red onion, chopped walnuts and feta cheese. Serve with a raspberry vinigrette. Great with most any dish.

a salad but just your basic green salad and maybe a fruit salad i mean you already have veggies and meat and bread in teh meal so all you really need is fruit and mayeb veggies
